Have you ever tried a "sheet pan" meal? I had not until today and boy, am I ever sorry that I had never tried this method before! This easy and delicious Sheet Pan Chicken and Veggies meal is Whole30, keto, Paleo, healthy and nutritious.
For those of you who don't know what a "sheet pan" meal is, let me take the time to clarify.
A sheet pan recipe simply means that all your food is cooked on one pan. Pretty basic, right?
So why had I never tried such a simple concept? Well, I think that it sounded so simple that I assumed the food would be unimpressive. Don't we all naturally assume that the more complex a recipe, the greater the final outcome?
Well, I am here to tell you it is possible to create a simple yet scrumptious recipe all on one pan!
How to make Sheet Pan Chicken and Veggies
First, I preheated my oven, pulled out my sheet pan and lined it with my copper baking mat. I absolutely love these mats...they are reusable and help to crisp food as it cooks. Plus, they come in a 5 pack and are under $12 which means that they are less than $3 each! If you don't have a copper baking mat, then feel free to use parchment paper but just realize, that the chicken and veggies may not end up as crisp.
After seasoning my chicken thighs, I placed them in the oven for 40 minutes.
As the chicken was cooking, I chopped and seasoned my veggies.
At the 20 minute mark, I added my veggies to my chicken and continues to cook the two together for the final 20 minutes.
By the end of 40 minutes, I had a healthy meal with little to no clean up necessary!
