But as someone who’s now more conscious of sugar and carbs, I set out to recreate that magic with a better-for-you twist.

- Catalina Crunch Cereal (Honey Graham or Cinnamon Toast) - This low-carb, high-protein cereal gives that graham cracker crunch and flavor—without the gluten or added sugars. It’s the perfect base layer! You can typically find these at some Costco stores, Publix and even Walmart.
- Sweetener - Adds additional sweeteness to this sugar-free S'mores bark recipe - you may or may not need to use this depending on how sweet your taste buds are as well as what type of sugar-free chocolate you use.
- ChocZero Sugar-Free Marshmallows - These are a total game-changer. Soft, squishy, and sweet, without the sugar. They melt beautifully and bring all that toasty marshmallow magic.
- Sugar-Free Chocolate Chips or Unsweetened Chocolate - Let's be honest - you can't possibly eat S'mores without chocolate, right?! Rich and smooth, the chocolate is used to create the bottom layer of the bark. I personally like to use a combination of sugar-free milk chocolate chips and unsweetened Baker's chocolate. However, feel free to use any sugar-free chocolate combination you wish. If you only have access to unsweetened Baker's chocolate, you will need to add some sweetener.
My Favourite Sugar-free Chocolate Chips
I have always been a fan of Bake Believe Melting Wafers in both the sugar-free chocolate and white chocolate varieties. In the past, they were easily accessible (I can get them at my local Walmart), the cheapest sugar-free chocolate on the market and the wafers are absolutely delicious!
However, for whatever reason, I have not been able to readily get my hands on the wafers and since it is over 100 degrees right now, ordering directly from their website would mean I would be recieving chunks of melted sugar-free chocolate!
So after doing some digging around, I found that Whole Foods offers Sugar-free Dark Chocolate Chips! Not only do they taste really good, but they are also sold in a 10 oz bag for just over $5 a bag!!!
So spread the word to everyone and let's make sure that Whole Foods keeps carrying this item!
Gluten-Free S'mores Dessert Instructions
- In a lined pan with parchment paper
- In a food processor, process 1 cup of the cereal until broken down into smaller pieces. Remove ¼ cup of crushed cereal and set it to the side.

- Melt the sugar-free chocolate
- Add the broken down cereal to the bowl with the chocolate and stir to incorporate

- Spread the mixture into the parchment paper, making a 8 x 11 inch rectangle
- Sprinkle with an additional 1 cup of cereal plus the remaining ¼ cup of crushed cereal followed by a layer of sugar-free marshmallows - press the topping ingredients down gently to unsure they adhere to the chocolate layer
- Place in the fridge to firm before breaking into chunks
- OPTIONAL - If desired, melt additional sugar-free chocolate and drizzle it over the keto marshmallow bark - sprinkle additional crushed cereal over the top.

Tips for the Best Low-Carb S’mores Bars:
- For extra crunch, mix a few more whole Catalina Crunch pieces into the top and bottom layers before chilling.
- Want a toasted marshmallow flavor? Use a kitchen torch to lightly toast the top layer!
- These are best kept chilled until serving to hold their shape in the summer heat.
- Feel free to use any type of sugar-free chocolate - taste the chocolate once melted and add additional sweetener to suit your taste.

Ingredients
- 1 ¼ cups Catalina Crunch Cereal, divided
- 3 oz Baker's Unsweetened Chocolate*
- 4 oz Sugar-free chocolate chips*
- 60 g (50 pieces) ChocZero Mini Marshmallows or chopped homemade marshmallows
- Optional - Sweetener to taste
Instructions
- Line a cookie sheet with parchment paper.
- In the bowl of a food processor, add 1 ¼ cup of cereal. Process until broken down into chunks. Remove ¼ cup and set it to the side.
- In a large glass bowl, add the sugar-free chocolate. Microwave on high for 30 seconds. Stir and return to microwave for 15-second intervals until chocolate has fully melted. Taste the chocolate and add sweetener to taste. Stir until sweetener dissolves.
- Stir the broken down cereal into the chocolate until all the cereal is covered in chocolate. Spread the chocolate on the parchment paper, into a 9 x 10 inch retangle.
- Sprinkle remaining reserved ¼ cup of crushed cereal, over the chocolate. Sprinkle the sugar-free marshmallows over the bark. Gently press the cereal and marshmallows into the chocolate layer to unsure they adhere.
- Place the pan in the fridge until firm enough to break into chunks.
