Folate is important for making DNA and RNA, and regulating homocysteine levels but is also necessary for protein metabolism. Keeping lower levels of homocysteine may actually prevent arterial wall damage as well as decrease the risk of heart attacks and strokes.
Cilantro is also high in Vitamin K which is important

As written, this recipe is lower in fat and higher in protein than is suitable for a keto diet. The great thing about following a keto diet is that adding fat to a dish is ridiculously easy. Here are some ways of converting this into a keto sweet cilantro chicken instead of a low-fat chicken recipe:
- use chicken thigh meat which contains about 3 times more fat than chicken breast meat
- after the chicken has cooked and the sauce has thickened, add in some full-fat cream cheese
- top the chicken with some sour cream and cheddar cheese
- add some avocado on top when serving
- stir in some butter for a creamier taste

Ways to eat cilantro chicken
Since I end up working really late some nights, I will just plop some leftover chicken in a bowl and eat it with a fork! Ingredients
- 2 lbs (900 g) chicken breast or thigh meat, boneless, skinless
- 1 tbsp minced garlic
- 2 tbsp sweetener (liquid or granular - see post for details)
- 7 oz (200 g) salsa verde
- 2 tsp cumin
- 1 tsp oregano
- 1 tsp paprika
Instructions
- Add the chicken to the bottom of a slow cooker. Add in remaining ingredients and set slow cooker on high for 3-4 hours or on low for 6-8 hours.
- Remove chicken and set it to the side.
- If using an all-in-one slow cooker, turn cooker to "saute-hi" and cook sauce until it thickens, 8-10 minutes. If not using an all-in-one, pour the sauce into a small saucepan and cook on medium-high heat until sauce thickens, about 8-10 minutes.
- While sauce is thickening, pull the chicken using two forks. Add the chicken back into the thickened sauce and toss to coat.
