Making this high protein slow cooker sweet cilantro chicken is a quick way to add extra protein to your diet. Only a handful of ingredients and time in a slow cooker, this healthy pulled chicken recipe could not be any easier!

Ingredients

  • 2 lbs (900 g) chicken breast or thigh meat, boneless, skinless
  • 1 tbsp minced garlic
  • 2 tbsp sweetener (liquid or granular - see post for details)
  • 7 oz (200 g) salsa verde
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp paprika

Instructions

  1. Add the chicken to the bottom of a slow cooker.  Add in remaining ingredients and set slow cooker on high for 3-4 hours or on low for 6-8 hours.
  2. Remove chicken and set it to the side.
  3. If using an all-in-one slow cooker, turn cooker to "saute-hi" and cook sauce until it thickens, 8-10 minutes.  If not using an all-in-one, pour the sauce into a small saucepan and cook on medium-high heat until sauce thickens, about 8-10 minutes.
  4. While sauce is thickening, pull the chicken using two forks.  Add the chicken back into the thickened sauce and toss to coat.
