PSMF Chicken Skewers
Chicken skewers are perfect for a quick and easy dinner or even for a backyard BBQ. They can be flavoured with all types of marinades and matched with simple, but dynamically flavoured dipping sauces.
This high protein chipotle chicken skewers recipe comes together with minimal effort. By quickly freezing the chicken for 30 minutes, it made them a cinch to slice evenly and thinly.
Then, if time allows, a quick toss in some baking soda for 30 minutes (see my PSMF Cashew Chicken recipe to learn why), keeps these chicken strips from drying out on the grill.

Ingredients for High Protein Chipotle Chicken Skewers
You do not need any fancy ingredients to make this keto chipotle chicken. Here is the list of ingredients along with any substitutions:
- Chicken - You will need boneless, skinless chicken breasts (about 3 large ones) for these psmf chipotle chicken skewers. You can always use chicken thighs instead for a keto version of this recipe
- Oil - Use any type of oil that is good for grilling. Although oil adds fat to these PSMF chicken skewers, the amount that actually remains on the chicken is minimal.
- Sweetener - I like to use Truvia Sweet Complete but any sweetener should work. Just remember that allulose tends to brown quickly so be aware that your chicken skewers may look cooked before they actually are!
- Fresh Cilantro Leaves
- Chipotle chile in adobo sauce - You will be using both the actual chipotle as well as the sauce that surrounds the chipotles. My favourite brand is La Costena.
- Garlic - You will need 1 garlic clove that will need to be minced
- Spices - Salt, chili powder and black pepper finish off the flavour of these delicious keto chicken skewers.
- Bamboo Skewers - Make sure you soak your bamboo skewers for at least 30 minutes so that they do not burn.
Instructions for Keto Chicken Skewers
You will need the chicken to marinate for at least 1 hour but the longer you leave the chicken in the marinade, the more flavourful so feel free to marinade the chicken for up to 24 hours.
Step 1 - Prepare the chicken
- Freeze the chicken for 30 minutes and then slice the chicken diagonally into ¼-inch-thick strips.
- In a medium bowl, whisk together all of the marinade ingredients.
- Add the marinade to a large zipper-lock bag along with the chicken.
- Seal shut, toss to coat, and refrigerate for at least 1 hour and up to 24 hours

Step 2 - Heat the oven and Prepare the skewers
- Adjust an oven rack 6 inches from the broiler element and heat the broiler.
- Line a broiler pan bottom with foil and cover with the broiler pan top; coat the broiler pan top with nonstick cooking spray.
- Weave each piece of chicken onto an individual skewer, lay the skewers on the broiler pan top, and cover the skewer ends with foil, making sure not to cover the chicken.

Step 3 - Broil the keto chicken skewers
- Broil until the meat is lightly browned and fully cooked, 5 to 7 minutes.
- Serve with your favourite dipping sauce, if desired.

- 1.5 lbs boneless, skinless chicken breasts (about 3 large breasts)
- ¼ cup vegetable oil
- ¼ cup brown sweetener (or other sweetener of choice)
- 2 tbsp cilantro leaves, chopped
- 2 tsp chipotle peppers, minced (removed from adobo sauce))
- 2 tsp adobo sauce (from can)
- 1 medium garlic clove, minced
- 1.5 tsp salt
- ½ tsp chili powder
- ¼ tsp black pepper
Instructions
- Freeze chicken for 30 minutes. Once chicken has firmed slightly, slice chicken diagonally, into ¼-inch strips. In a medium bowl, whisk together all of the remaining marinade ingredients. Add the marinade to a large zipper-lock bag along with the chicken. Seal shut, toss to coat, and refrigerate for at least 1 hour and up to 24 hours.
- Adjust an oven rack 6 inches from the broiler element and heat the broiler.
- Line a broiler pan bottom with foil and cover with the broiler pan top; coat the broiler pan top with nonstick cooking spray.
