These PSMF Birthday Cake Protein Bars contain all the fun and festive flavours and colours of a birthday cake without all the sugar and carbs! With only 1 gram of net carbs per bar and 12 grams of protein per each bar, this means that you can have your cake and eat it too!

Ingredients for PSMF Birthday Cake Protein Bars
There are only a couple of ingredients used in different manners to create the protein nougat, caramel and chocolate layer for this delicious keto candy bar recipe.
- Butter - Butter binds the protein powder to create that amazing protein nougat texture. You can use salted or unsalted butter. If using unsalted, make sure to taste your protein nougat and add any additional salt to suit your taste. You can substitute the salt for peanut butter, coconut oil or even heavy cream if you wish.
- Protein powder - I used a combination of Egg White Protein powder and Vanilla blended protein powder. You can pretty much use any type of protein powder, however, you may need to add more liquid or more powder to achieve the desired consistency.
- Sweetener - I like to use Truvia Brown Sugar Substitute but any brand will work. You may need to adjust the quantity listed in the low carb protein bar recipe to suit your tastes.
- Funfetti sprinkles - These are completely optional but I love the look they give these bars. Plus, making these homemade funfetti sprinkles couldn't be any easier. If you do not want to make your own, you can always buy sugar-free sprinkles instead.
- Vanilla - You can use vanilla extract in this recipe. The actual "birthday cake" flavour is really just a heavy vanilla flavour so make sure you can really taste the flavour for the best birthday cake protein bars.
- Sugar-free chocolate - Coating these bars is purely optional. IF you do decide to coat the bars, I like to use a combination of Bake Believe Melting Wafers in either chocolate or vanilla.
How to Make Keto Protein Bars
Are you ready to make the most delicious keto protein bars?!!
Whisk together the protein powders and sweetener. Add the softened butter and pour the hot water into the bowl. Stir until all the ingredients come together.
Stir in the birthday cake sprinkles. Evenly divide the protein nougat between the 12 candy moulds and press the protein nougat down firmly. Place in the freezer to firm.
Melt the wafers in the microwave for 30 seconds. Stir until all the wafers have melted. Pour the melted wafers over the PSMF birthday cake protein bars and return the bars to the fridge to firm.
Once firm, remove the bars and enjoy!
How do you melt sugar-free chocolate in the microwave?
Add the chocolate to a microwaveable bowl and microwave on high for 30 seconds. Stir the chocolate until all the chocolate has melted. If the chocolate does not fully melt after about 1 minute of stirring, return the bowl to the microwave for 15 seconds before stirring again. Repeat this process until all the chocolate has melted.
What can I use if I do not have a candy mould?
You can easily make these using a 9 x 5-inch loaf pan. Just make sure that you line the loaf pan with parchment or aluminum foil, making sure to have an overhang to make removing the keto candy bars easy.
How should I store these keto protein bars?
These bars are best stored in the fridge. They can be left at room temperature if your house is not too warm. Since I live in Florida, I store mine in the fridge. You can also easily freeze these bars as well.
Can I make these Copycat sugar-free Snickers bars nut-free?
Yes. You can use butter or sunflower seed butter instead of peanut butter and pumpkin or sunflower seeds instead of peanuts.
What can I do if my protein nougat is too dry?
Different protein powders will absorb different amounts of liquid so if your nougat is too dry, simply add a tablespoon of liquid at a time(either water, almond milk or melted coconut oil), until the mixture comes together.
Do I have to use Egg White Protein powder?
No. However, unflavored egg white powder not only blends with the other ingredients but also gives these bars a beautiful chewy texture.
How do I form the bars without them sticking to my fingers?
You can either place the bowl in the fridge to allow for the "dough" to cool or, simply wet your hands and mould the bars.

Ingredients
For the protein bar:
- 90 g vanilla casein powder (or a protein powder blend)*
- 90 g egg white protein powder, plain
- ½ cup hot water
- ¼ cup butter, salted
- ¼ cup sweetener
- 1 tbsp imitation vanilla
- ½ cup multicolour Funfetti sprinkles
For the optional chocolate coating:
- ½ cup sugar-free white or chocolate melting wafers (I LOVE Bake Believe)
Instructions
- Whisk together the protein powders. Melt the butter and liquid sweetener and stir it into the protein powders. You are looking for the texture of cookie dough. Wait until the mixture has cooled and then fold the coconut flakes into the protein powder mixture. If the mixture is too sticky, place it in the fridge to firm for about 15-30 minutes. Evenly divide the protein nougat between the 12 candy moulds and press the protein nougat down firmly.
- Melt the chocolate chips in the microwave for 30 seconds. Stir until all the chocolate has melted. If the chocolate has not fully melted, return it to the microwave for an additional 15 seconds. Evenly pour the chocolate birthcake protein bars and return the bars to the fridge to firm.

- Nutritional information does not include chocolate coating.
- * All protein powders are DIFFERENT so if your bars are too dry, simply add a tablespoon of water at a time until they come together. If your bars are too wet, add more casein protein powder OR use a little coconut flour to help bind things together
- I do NOT suggest only using Whey protein powder as it contains digestive factors and your bars will not come together properly and will be VERY sticky
- For a chewier bar, add 1-2 tablespoon The Fittest or Collagen protein powder.
