High Protein Chocolate Chip Cookies
It’s nearly Christmas, which means we’re all scrambling to get our last minute holiday stuff done. For me this means adding a few festive bakes to the blog.
But, unlike my Keto Chocolate Espresso Chip Cookie Recipe or this Keto Strawberry Thumbprint Cookies Recipe, I wanted to create a low carb cookie recipe that was also high in protein to fit into my PSMF lifestyle (you can read more about PSMF here). I took my favourite protein powders and created this deliciously healthy high protein cookie recipe that comes together in under 5 minutes and requires only a bowl and a spoon!

PSMF Chocolate Chip Cookie Ingredients
You only need a couple of ingredients to make this high protein cookie recipe. I am giving you the exact name brand of products I use. If you choose to go with a different brand, I can not guarantee the outcome. I you use a different brand product, let me know and I will add it to the list!
- Vanilla Protein Powders - I used Nutricost Vanilla Casein protein powder which I buy on Amazon as well as The Fittest Carnivore protein powder. These two protein powders keep these cookies nice and soft and chewy in the inside.
- Egg - For this recipe, you do NOT need the egg to be at room temperature!
- Oat Fiber - I only use Modern Mountain Oat fiber as it has ZERO taste (unlike some other brands!). I am fairly certain you could replace the oat fiber with ground flaxseed meal.
- Almond Flour - Only use super-fine almond flour in this recipe
- Almond Milk - Use unsweetened almond milk. You can use it directly from the refrigerator and does not need to be at room temperature.
- Sugar-free Chocolate Chips - I like to use Bake Believe Milk and Dark Chocolate chips but feel free to use any sugar-free chocolate chip.
- Salt, Baking Soda and additional sweetener - Since each protein powder has various levels of sodium and sweetness, you may need to add a pinch or two of salt and a tablespoon or two of sweetener.
Making Protein-Sparing Modified Fasting Cookies
These high protein chocolate chip cookies only require a bowl and a spoon!
Step 1 - Combine the dry ingredients
- Whisk together the dry ingredients
Step 2 - Add the wet ingredients
- Using a large spoon, stir the wet ingredients into the dry ingredients (if the mixture seems to dry, add a little more almond milk)

Step 3 - Fold in the chocolate chips
- Add the sugar-free chocolate chips to the mix and stir until they are evenly distributed

Step 4 - Bake
- Divide the dough into either 12 cookies or 6 cookies and evenly space them on a parchment lined baking sheet

- bake at 350 degrees F for 8-9 minutes (Tip - do NOT overbake these cookies as they will become cakey and less gooey)

Ingredients
- 64 grams Nutricost Vanilla Casein Protein Powder
- 26 grams The Fittest Butter Vanilla Protein Powder
- 32 grams almond flour
- 10 grams oat fiber
- 1 small egg
- ⅓ cup almond milk
- pinch of salt
- pinch of baking soda
- ⅓ cup sugar-free chocolate chips
Instructions
- Preheat the oven to 350 degrees F. Line a large cookie sheet with parchment paper and set it to the side.
- In a large mixing bowl, add all the dry ingredients, except for the chocolate chips. Whisk to incorporate.
- Add in the egg and almond milk and stir until mixture comes together like cookie dough (if mixture is too dry, add a tablespoon at a time of additional almond milk).
- Fold in chocolate chips.
- Divide the dough evenly into 7 cookies and place them on the cookie sheet (don't worry about cookies being somewhat close together as they will no spread very much)
- Bake for 8-9 minutes (do NOT overbake the cookies!). Remove from oven and allow them to cool for 5 minutes before removing them from the cookie sheet.
Notes
- do NOT overbake these cookies as they will end up cakey and not fudgey.
- You may want to add 1 tablespoon of additional sweetener to your cookie batter if you do NOT use the listed products.
