These High Protein Chocolate Chip Cookies are a super healthy way to enjoy a sweet treat. Stuffed with sugar-free chocolate chips, these high protein low carb cookies contain 12 grams of protein per cookie and just over 1 gram of carbs each! Perfect for when you get a cookie craving and want to stick to a healthy diet!

Instructions

  1. Preheat the oven to 350 degrees F.  Line a large cookie sheet with parchment paper and set it to the side.
  2. In a large mixing bowl, add all the dry ingredients, except for the chocolate chips.  Whisk to incorporate.
  3. Add in the egg and almond milk and stir until mixture comes together like cookie dough (if mixture is too dry, add a tablespoon at a time of additional almond milk).
  4. Fold in chocolate chips. 
  5. Divide the dough evenly into 7 cookies and place them on the cookie sheet (don't worry about cookies being somewhat close together as they will no spread very much)
  6. Bake for 8-9 minutes (do NOT overbake the cookies!).  Remove from oven and allow them to cool for 5 minutes before removing them from the cookie sheet.

Notes

  • do NOT overbake these cookies as they will end up cakey and not fudgey.
  • You may want to add 1 tablespoon of additional sweetener to your cookie batter if you do NOT use the listed products.
