Light, Luscious, and Low-Carb: My Go-To Keto Strawberry Mousse Frosting
There’s something about strawberries that instantly lifts my mood. Maybe it's the colour, the aroma, or the sweet-tart bite that reminds me of long summer days. Either way, when I went keto, I refused to give up on strawberries. That’s how this sugar-free strawberry frosting was born—pure bliss in a bowl, without the carb crash.
This frosting has quickly become one of my most requested recipes among family and friends, even those who aren’t following a keto lifestyle. It's smooth, lightly sweet, and full of real strawberry flavour—no fake extracts or artificial colours needed. Best of all, it’s low-carb, sugar-free, and only takes a few simple ingredients: heavy cream, strawberries, gelatin, and allulose.
Fresh or Frozen Berries? Both Work Beautifully.
Depending on the season or what’s hiding in the back of your freezer, you can use either fresh strawberries or frozen and thawed berries. I personally love using fresh strawberries in peak season—they’re vibrant, juicy, and easy to chop.
But frozen strawberries are a game-changer when fresh ones are out of reach or you're short on prep time. Just thaw them and puree them in a food processor.
Either way, the berries are gently heated and blended to form the base. Gelatin is the secret that gives the mousse its airy structure, while heavy cream whipped to soft peaks brings in that irresistible, cloud-like texture. Allulose rounds it out with the perfect touch of natural-tasting sweetness—no weird aftertaste, no spikes in blood sugar.

How I Use It
I’ve piped this mousse onto almond flour cupcakes, layered it between keto sponge cake, and even eaten it straight from the mixing bowl (zero regrets). It’s also perfect for a make-ahead dessert—store it in the fridge and enjoy spoonfuls throughout the week when your sweet tooth hits.
What I love most is how adaptable it is. Want it thicker for piping? Chill it a little longer. Prefer it as a lighter mousse to eat with a spoon? Whip it a touch less and serve in ramekins with a dollop of whipped cream.
This frosting is more than just a topping—it’s my little keto indulgence that feels luxurious but fits beautifully into my goals.
Keto Whipped Strawberry Icing Tips:
- Don’t overwhip - Overwhipped cream gets clumpy, separates, and eventually turns into butter, which will make your sugar-free strawberry frosting curdle
- Let the strawberry-gelatin mixture fully cool - If the strawberry gelatin mixture is hot or even luke-warm, it will melt the whipped cream and you will end up with strawberry soup (not the worst thing in the world!)

- Keep your heavy cream chilled - Warm heavy cream doesn’t whip properly. I like to place my metal mixing bowl in the freezer for about 20 minutes to ensure a perfect keto whipped strawberry icing.
