If you have been following any of the anti-aging and health podcasts lately, you may have noticed how much emphasis health experts are placing on getting enough protein in our diet.
Although most of my blog has been based on recipes that follow a keto diet, I have started to up my protein intake and I can not believe the difference it has made to my physical and mental health!

Why you need this high protein snack recipe
I am a firm believer that adding more protein to your diet can only be of benefit.
Here are my observations after adding more protein to my diet as well as following a protein-sparing modified fasting routine, instead of my usual pure fasting regimen:
- decreased body weight - Like most women, I slowly started gaining about 5 pounds a year after I reached 40 years old. Five pounds doesn't sound like much but when you multiply it by 6, it ends up being 30 lbs!! After adding more protein to my diet, I was able to take off all the weight as well as an additional 5 lbs making for a total body weight loss of 35 lbs in about 8 months!
- increase muscle tone - I have always ran and lifted weights but could not see much definition until I started taking in more protein. Now, not only can I lift heavier weights but you can see muscle definition in every region of my body!
- decreased appetite - I have less cravings and feel full much longer since increasing my protein. As it turns out, it takes your body approximately 30% more energy to break down protein compared to fat. What that means is that for every 100 calories of protein you ingest, your body uses 30 calories just to break down the protein leaving you a net calorie intake of only 70 calories. Fat calories take almost no calorie expenditure to break down meaning that 100 calories of fat result in 100 calories being absorbed.

The importance of protein for a strong immune system
Did you know that without enough protein, your body's immune system will not be able to function properly?
Protein plays a key role in keeping our immune system strong because it helps build and repair the body’s tissues, including the cells that make up our immune defences. When we eat protein, our body breaks it down into amino acids, which are the building blocks for white blood cells, antibodies, and other vital immune molecules. Without enough protein, the body may struggle to produce these important components, leaving us more vulnerable to infections and illnesses.
Many foods rich in protein are also good sources of choline. Choline is a key to synthesizing certain phospholipids. These phospholipids are essential for the structure and function of cell membranes, including those of immune cells. By maintaining cell integrity, choline supports the optimal functioning of immune cells like macrophages and T-cells.
In addition to its structural role, choline also influences immune function through its involvement in reducing inflammation. It is a precursor to a neurotransmitter called acetylcholine, which can regulate the body’s inflammatory response. This connection between choline and immune function highlights its importance in maintaining a balanced and responsive immune system, particularly in preventing overactive inflammation, which can damage tissues and impair immunity.
Now that we are all a little more educated in terms of the importance of protein in our diet, let's turn to the healthy ingredients needed to make these keto protein coconut white chocolate bites!
Ingredients for Keto Coconut White Chocolate Protein Bites
You only need 4 basic ingredients to make these protein coconut white chocolate bites. Here is the list of ingredients along with any substitutions.
- Unsweetened Coconut - Unsweetened coconut is healthy because it's rich in healthy fats, fiber, and essential nutrients like manganese, which support energy production, digestion, and overall heart health without added sugars. Make sure you use unsweetened coconut and not sweetened coconut.
- Protein Powder - You can use any type of Casein, Pea, Collagen, Beef or Egg white protein powder. I like to use vanilla-flavoured protein powder but any flavour will work. I do not suggest using whey as it contains digestive enzymes which will make the protein bites gummy in texture.
- Sugar-free White Chocolate - The best sugar-free white chocolate, in my opinion, is by Bake Believe. Here in Florida, you can get Bake Believe White Melting Wafers at Walmart for about $5 per 9 oz bag.
- Pinch of salt and optional natural food colouring

What's the deal with food colouring?
Lately, there has been a big push to eliminate food dyes from our food.
Food dyes can be harmful because synthetic dyes, like Red 40 and Yellow 5, have been linked to hyperactivity, allergic reactions, and behavioural issues in children. These dyes are often made from petroleum and may contribute to long-term health concerns, including potential carcinogenic effects when consumed in large amounts. While the evidence is still debated, many experts recommend limiting food dyes, especially since they offer no nutritional benefits and are often found in highly processed, low-quality foods.
The good news is that you can buy several options for natural food dyes online.
Tips for making the BEST protein bites
- Make sure that you use a protein powder that you actually REALLY like the taste - I love Nutricost Vanilla Casein
- You can also use The Fittest Vanilla Butter Carnivore protein powder for a carnivore take
- For a making keto protein bites, increase the oil to 1 tablespoon, decrease the protein powder by half and increase the shredded coconut to 1 cup (I will include the modification in the recipe card)
- If the mixture ends up too dry, add only a little water or almond milk at a time until the mixture can be rolled into bites. IF the mixture is too wet, add a little additional protein powder.

Ingredients
For the High Protein Bites:
- 60 grams unsweetened shredded coconut
- 60 grams Casein Vanilla Protein Powder
- 128 grams Bake Believe White Chocolate Melting Wafers
- 1 tsp coconut oil
- pinch salt
- natural food colouring (if desired)
For the Keto Bites:
- 120 grams unsweetened shredded coconut
- 30 grams Casein Vanilla Protein Powder
- 128 grams Bake Believe White Chocolate Melting Wafers
- 1 tbsp coconut oil
- pinch salt
- 5-15 drops natural food dye - optional
Optional coating:
- 130 grams sugar-free chocolate
- 1 tsp coconut oil
- gold sprinkles
Instructions
- In a medium-sized bowl, combine the coconut, protein powder and salt. Stir to incorporate and set the bowl to the side.
- In a small bowl, combine the white chocolate and oil. Stir to incorporate and microwave on high for 30 seconds. Stir and return the bowl to the microwave for 15-second intervals until the chocolate has melted.
- Add the chocolate to the coconut and stir to incorporate. Add 5-15 drops of natural food dye and continue to stir until colour is uniform and the mixture begins to stick together. Tip - If mixture does not want to stick together, add 1 tablespoon at a time to the bowl until it begins to stick.
- Take small spoonfuls of the dough (you will want to divide the mixture into 14 even bites) and roll between your palms to form tight bites—place in fridge to firm.
- While bites are firming, melt the white chocolate and oil in the microwave.
- Once bites are firm, drizzle the melted chocolate over the bites and sprinkle with gold sprinkles, if desired.
- Allow to cool fully at room temperature or in the fridge.
