Sugar-free Chocolate Souffle
As much as most people love Thanksgiving and Christmas Day for the food, my FAVOURITE meal was Christmas Eve. Christmas Eve dinner comprised of Keto Italian Stuffed Crepes followed by Low Carb Chocolate Souffles - it was by far, my favourite meal EVER!!!
So, with the holidays around the corner, I was craving chocolate souffle...and that's how these deliciously light, sugar-free chocolate souffle cookies came about!
A combination of light and airy meringue with the richness of chocolate swirled throughout, these high protein cookies are sinfully delicious and secretly healthy!

Kitchen Science Lesson - Cream of Tartar
Do you know where cream of tartar comes from?
Believe it or not, cream of tartar comes from wine making! That's right - during the fermentation process, crystals form at the bottom of the wine barrels. These acidic crystals are then turned into powder form and packaged as cream of tartar!
How does cream of tartat work? It works by creating little air bubbles which in turn prevent the proteins in the egg whites from binding together. This creates not only billowy meringue, but also stops the liquid from weeping when baked.

So grab your stand mixer, the following seven ingredients:
- Egg whites (can be from a container in liquid form)
- Sugar-free chocolate - I use BakeBelieve which you can buy in the States at Walmart
- Sweetener - I have only made these souffle cookies using WholeEarth Allulose Baking blend which does contain a touch of xantham gum. If you use a different type of sweetener, the texture may be slightly different.
- Casein vanilla protein powder - My favourite brand is Nutricost which I get on Amazon
- Cream of tartar
- Vanilla
- Salt

Ingredients
- 120 grams sugar-free semi-sweet chocolate chips
- ½ cup egg whites, at room temperature
- ¼ tsp cream of tartar
- ¼ cup granular WholeEarth Allulose Baking sweetener
- ¼ cup Nutricost Vanilla Casein Protein Powder
- ¼ tsp vanilla extract
- ⅛ tsp table salt
Instructions
- Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper and set it to the side.
- Place the chocolate chips in a microwaveable bowl and heat for 30 seconds. Stir and return for an additional 30 seconds and stir again until all the chocolate has melted. Set the bowl to the side.
- In the bowl of a stand mixer, add the egg whites and cream of tartar. Whisk at medium speed until frothy. Slowly add the sweetener in a steady stream. Increase the speed to high and whip until stiff peaks form (2-4 minutes).
- Turn mixer on medium speed and slowly add the vanilla casein, if using, until fully incorporated.
- Fold in by hand the vanilla and salt, followed by the nuts and lastly the melted chocolate (you can fully incorporate the chocolate or leave it with streaks throughout).
- Using a cookie scoop, drop tablespoons of mixture 1 inch apart (I was able to get 20 cookies, 5 x 4, on a single cookie sheet).
- Bake until tops of shiny, edges are set and centers still feel slightly soft, about 8-10 minutes.
- Remove from oven and allow cookies to cool on baking sheet set on a baking rack for at least 30 minutes to 1 hour.
- Serve or store in an airtight container for up to 5 days.
Notes
- You can omit the casein if you wish but you will need to increase the quantity of sweetener to ⅓-1/2 cup depending on your taste buds. Please note that the texture will be slightly different without the casein
- I have ONLY made this recipe using Nutricost Casein and WholeEarth Allulose Baking Blend. I am unsure of the final texture of the cookies if you use different brands.
