Sugar-free Chocolate Souffle Cookies - High Protein!

These sugar-free chocolate souffle cookies are not only easy to make but also super high in protein! Just 7 simple ingredients, these healthy low carb cookies (only 25 calories each!) are a delicious treat that can easily fit into any diet - gluten-free, dairy-free, and sugar-free!

Instructions

  1. Preheat the oven to 350 degrees F.  Line a large baking sheet with parchment paper and set it to the side.
  2. Place the chocolate chips in a microwaveable bowl and heat for 30 seconds.  Stir and return for an additional 30 seconds and stir again until all the chocolate has melted.  Set the bowl to the side.
  3. In the bowl of a stand mixer, add the egg whites and cream of tartar.  Whisk at medium speed until frothy.  Slowly add the sweetener in a steady stream.  Increase the speed to high and whip until stiff peaks form (2-4 minutes).
  4. Turn mixer on medium speed and slowly add the vanilla casein, if using, until fully incorporated.
  5. Fold in by hand the vanilla and salt, followed by the nuts and lastly the melted chocolate (you can fully incorporate the chocolate or leave it with streaks throughout).
  6. Using a cookie scoop, drop tablespoons of mixture 1 inch apart (I was able to get 20 cookies, 5 x 4, on a single cookie sheet).
  7. Bake until tops of shiny, edges are set and centers still feel slightly soft, about 8-10 minutes.
  8. Remove from oven and allow cookies to cool on baking sheet set on a baking rack for at least 30 minutes to 1 hour.
  9. Serve or store in an airtight container for up to 5 days.

Notes

  • You can omit the casein if you wish but you will need to increase the quantity of sweetener to 1/3-1/2 cup depending on your taste buds.  Please note that the texture will be slightly different without the casein
  • I have ONLY made this recipe using Nutricost Casein and WholeEarth Allulose Baking Blend.  I am unsure of the final texture of the cookies if you use different brands.
