- 120 grams sugar-free semi-sweet chocolate chips
- 1/2 cup egg whites, at room temperature
- 1/4 tsp cream of tartar
- 1/4 cup granular WholeEarth Allulose Baking sweetener
- 1/4 cup Nutricost Vanilla Casein Protein Powder
- 1/4 tsp vanilla extract
- 1/8 tsp table salt
Instructions
- Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper and set it to the side.
- Place the chocolate chips in a microwaveable bowl and heat for 30 seconds. Stir and return for an additional 30 seconds and stir again until all the chocolate has melted. Set the bowl to the side.
- In the bowl of a stand mixer, add the egg whites and cream of tartar. Whisk at medium speed until frothy. Slowly add the sweetener in a steady stream. Increase the speed to high and whip until stiff peaks form (2-4 minutes).
- Turn mixer on medium speed and slowly add the vanilla casein, if using, until fully incorporated.
- Fold in by hand the vanilla and salt, followed by the nuts and lastly the melted chocolate (you can fully incorporate the chocolate or leave it with streaks throughout).
- Using a cookie scoop, drop tablespoons of mixture 1 inch apart (I was able to get 20 cookies, 5 x 4, on a single cookie sheet).
- Bake until tops of shiny, edges are set and centers still feel slightly soft, about 8-10 minutes.
- Remove from oven and allow cookies to cool on baking sheet set on a baking rack for at least 30 minutes to 1 hour.
- Serve or store in an airtight container for up to 5 days.
Notes
- You can omit the casein if you wish but you will need to increase the quantity of sweetener to 1/3-1/2 cup depending on your taste buds. Please note that the texture will be slightly different without the casein
- I have ONLY made this recipe using Nutricost Casein and WholeEarth Allulose Baking Blend. I am unsure of the final texture of the cookies if you use different brands.
