This Pear Prosciutto Gorgonzola Pizza on an Avocado crust is the perfect healthy, gluten-free and keto-friendly recipe. The saltiness of the Prosciutto and Gorgonzola combined with the sweetness of the pears makes a delicious and perfectly balanced pizza.
When it comes to creating recipes, finding something that someone has not already come up with can be difficult. For this very reason, I am super excited and well as very proud of my Dairy Free Avocado Pizza Crust (Whole30, Keto, GF).
So, not to harp on the subject (but for the official record!), I, Cat Martin, created the original recipe for the Avocado Pizza Crust.
Now that I have laid claim to the creation, I knew I had to get creative with some pizza toppings.
I think Mr. Grumbles and I could eat pizza every night. Although he could stick with the basic pepperoni and cheese, I, on the other hand, prefer the "crazier" and bolder flavours that you can blend together to create a "dance party in your mouth" type of experience!
The cool thing with this recipe is that if you don't want to use my Avocado Pizza Crust, you can use any pizza crust you choose.
As for the toppings, by combining the sweetness of the pear with the saltiness of the prosciutto and Gorgonzola, the perfect harmony of flavours was achieved!
How to make Pear Prosciutto Gorgonzola Pizza:
Step 1:
- Prepare the crust (Here is the original recipe for my Dairy-Free Avocado Pizza Crust)
- Combine all the avocado crust ingredients in a large bowl.
- Using a large spoon, stir the ingredients together.
- At this point, I like to put the ingredients in the fridge so that the coconut flour can absorb any liquid that may result from the avocado.
- Next, place a piece of parchment paper over your pizza tray.
- Pour the avocado mixture onto the pizza pan and carefully spread the mixture using your hands to form the crust.
- Place the crust in a 400 degree F oven and bake 20-30 minutes or until the crust is starting to brown.
Step 2: Assemble the pizza
- While the crust is baking, spray a small skillet well with cooking spray and heat on medium-high heat.
- Once the skillet has heated, add the sliced onion and stir every so often until onion begins to brown (approximately 10 minutes).
- Set the onion aside.
- Next, brush the pizza crust with olive oil and sprinkle the entire crust with some Italian seasoning, Parmesan cheese and Gorgonzola.
- Finally top the pizza with the sliced pear, prosciutto and cooked onion.
Step 3:
- Return the pizza to the oven and increase the oven temperature to 425 degrees F.
- Bake the pizza 10-15 minutes or until cheese begins to bubble.
How does this Pear Prosciutto Gorgonzola Pizza stand up the next day?
Since there are only 2 of us in our household, we had plenty of leftovers. Believe it or not, the pizza crust held up perfectly well the next day.
For experimental sake, I actually placed 2 slices in the freezer.
Two days later, I pulled the slices out and had them for lunch and they were just as good as the first day!
