Living in Florida, I really don't like turning on my oven in the summer.
With it hitting over 90 degrees, even the thought of baking can be daunting.
And that's why I created this simple, easy No-Bake Coconut Strawberry Bar recipe.
Simple ingredients, no oven and absolutely delicious, these bars are the perfect hot summer day treat.

What ingredients do you need to make these low carb coconut bars?
- Cashews
- Unsweetened Coconut flakes
- Liquid sweetener
- Freeze-dried strawberries
What type of cashews can I use?
I like to use roasted and salted cashews.
However, raw and unsalted also work just as well. The only thing you need to be aware of is that you may need to add additional salt and/or sweetener to suit your taste.
What type of liquid sweetener can I use?
I used either liquid Allulose or liquid Vitafiber. If you don't mind a slight maple flavour, you can use any type of sugar-free maple syrup as well.
Where can I find freeze-dried strawberries?
I got organic freeze-dried strawberries from amazon. Although they seem somewhat pricey, you will only need a ¼ cup or 5 grams.
Also, although higher in carbs than regular strawberries, freeze-dried strawberries really pack a flavour punch so you don't need as many to get the same flavour.
In this recipe, the total carb count that the freeze-dried strawberries add to the recipe is about 4 grams. So, if you divide this recipe into 6 bars, you are only adding 0.7 g per bar.
What substitutions can I use for these No-Bake Coconut Bars?
*Please note that any substitutions will alter the nutritional value or each bar
Cashews
- replace it with any other nut such as peanuts, almonds or macadamia nuts
- replace it with seeds such as pumpkin or sunflower seeds
Liquid Sweetener
- replace with honey
Unsweetened Coconut Flakes
- replace with any type of coconut flakes but just make sure you adjust accordingly as you will most likely not need to add the additional powdered sweetener
Freeze-Dried Strawberries
- replace with chocolate chips, raisins or cranberries
How do you store these No-Bake Coconut Strawberry Bars?
I like to store these bars in the fridge but they can also be stored in an airtight container at room temperature. They will last 5 days on the counter and up to 2 weeks in the fridge.
These bars also freeze well for up to 2 months.

Keto Coconut Cashew Strawberry Bars
If you love coconut and strawberries, you are going to love these quick and simple No-Bake Coconut Strawberry Bars.

Ingredients
- 1 cup roasted, salted cashews
- 1 cup coconut flakes
- ¼ cup liquid sweetener
- ¼ cup freeze dried strawberries
For the Strawberry Drizzle
- 1 tbsp freeze dried strawberries
- 1 tbsp coconut oil
- 4 tbsp powdered sweetener
Instructions
- Place the coconut and cashews in a food processor. Process until both ingredients have been broken down into smaller pieces. Add in liquid sweeter and process for an additional 1 minute.
- Add in dried strawberries and pulse 5-8 times or until strawberries have been incorporated and slightly broken down into smaller pieces.
- Line a 9 x 5 loaf pan (or 8 x 4) with parchment paper or aluminum foil. Press mixture into the pan evenly and place the bars in the fridge to harden (about 20 minutes)
- Once the bars have firmed up, remove them from the loaf pan and slice into 6 even bars.
For the Strawberry Drizzle:
- Crush the dried strawberries with a mortar and pestle. Add in the coconut oil and powdered sweetener. Stir until everything is combined and drizzle it over the bars
