I have decided that when it comes to desserts, there are only 2 types of people. You either love "light and fluffy" or "rich and dense". If you like "light and fluffly" desserts, then stop reading as this recipe is not for you!
I definitely prefer "dense" over "light". Give me a brownie any day over a muffin.
How would you classify carrot cake? I mean, when you think about it, it is a cake, it is light but it is also super moist which adds a little density to the cake. I decided that since the verdict is still out on whether or not to consider carrot cake "dense" or "light", I would create a recipe that would DEFINITELY solve the conundrum and officially make a dense version.
Since I am using almond flour and coconut flour, these bars do not need to be baked. You can not swap out regular flour for the coconut and almond flour since regular flour most be baked. For those of you who don't know, raw all purpose flour may be contaminated with harmful bacteria such as E. coli and therefore must be baked to kill any bacteria.
So, with that little interesting fact, let's get back to the recipe.
Simply combine all the dry ingredients in a bowl and mix well until completely combined. Next, add the melted butter and if necessary, a little almond milk. Press the mixture into a loaf pan and put them in the fridge to harden. As the bars are hardening, simply combine some cream cheese with some sweetner to make the cream cheese frosting.
I had some leftover carrot so I added it to the top for some extra decorations.
These bars are extremely decadent so a small bar goes a long way!

These easy carrot cake bars take only minutes to prepare and only a small bite will be needed to satisfy a carrot cake craving! Since no baking is required, even young family members can participate.

Ingredients
For the bars:
- 150 g carrots, pureed or finely chopped (could use baby food instead)
- ½ cup stevia (or other sweetener of choice)
- 150 g almond flour (approximately 1.5 cups)
- 50 g melted unsalted butter (approximately ½ stick)
- 50 g coconut flour (approximately ½ cup)
- 1 tsp vanilla
- 2 tsp cinnamon
- 1 tsp allspice
- 1 tsp ginger
- ¼ tsp salt
- almond milk if mixture is too dry
For the Cream Cheese Frosting
- 4 oz cream cheese, softened
- ¼-½ cup stevia (or other sweetener)
Instructions
- Combine all the dry ingredients for the bars in a large bowl and whisk together.
- Melt butter in microwave in 30 second increments until fully melted.
- Pour butter over dry ingredients and stir to combine. If after 1 minute, mixture looks to dry, add 1 tablespoon of almond milk at a time until mixture can be formed into a ball.
- Line a loaf pan with parchment paper and press mixture into pan. Place pan in fridge to solidify
- While bars are hardening, beat softened cream cheese with sweetener until light and fluffy.
- Remove bars from fridge and cover with frosting. Return to fridge for another hour or more.
- Remove bars from loaf pan and divide into 16 bite size bars.
- Store bars in refrigerator for up to 2 weeks.

- feel free to use any sweetener of choice including honey.
