These easy carrot cake bars take only minutes to prepare and only a small bite will be needed to satisfy a carrot cake craving!  Since no baking is required, even young family members can participate.

Ingredients

For the bars:

  • 150 g carrots, pureed or finely chopped (could use baby food instead)
  • 1/2 cup stevia (or other sweetener of choice)
  • 150 g almond flour (approximately 1.5 cups)
  • 50 g melted unsalted butter (approximately 1/2 stick)
  • 50 g coconut flour (approximately 1/2 cup)
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 1 tsp allspice
  • 1 tsp ginger
  • 1/4 tsp salt
  • almond milk if mixture is too dry

For the Cream Cheese Frosting

  • 4 oz cream cheese, softened
  • 1/4-1/2 cup stevia (or other sweetener)

Instructions

  1. Combine all the dry ingredients for the bars in a large bowl and whisk together.
  2. Melt butter in microwave in 30 second increments until fully melted.
  3. Pour butter over dry ingredients and stir to combine.  If after 1 minute, mixture looks to dry, add 1 tbsp of almond milk at a time until mixture can be formed into a ball.
  4. Line a loaf pan with parchment paper and press mixture into pan.  Place pan in fridge to solidify
  5. While bars are hardening, beat softened cream cheese with sweetener until light and fluffy.
  6. Remove bars from fridge and cover with frosting.  Return to fridge for another hour or more.
  7. Remove bars from loaf pan and divide into 16 bite size bars.
  8. Store bars in refrigerator for up to 2 weeks.

 

Notes

  • feel free to use any sweetener of choice including honey.
