OK you guys... so I’m pretty excited about Sunday’s game.
Are you the type of people that actually watch the game, or hang out by the food table and eat?
I do a little of both . . and if the food is good, watch out.
But with most people serving chips and other super "carby" food, I wanted to come up with something that tastes just as good as all the carb-heavy appetizers that everyone is used to eating.
Ever since making my Easy Keto Biscuits with Delicious Cherry Pie Filling, I knew I wanted to take that idea, change up some ingredients and create other "biscuit" type recipes.
So, I finally whipped it up as an appetizer for a little Sunday Game Day and man were they ever a hit!
From all my appetizers and dips recipe, such as my Buffalo Chicken Wing Dip (Whole30, Paleo, Keto), my Sausage Apple Cheese Dip (Gluten-Free, Keto) as well as my Olive Stuffed Meatball Appetizers, this recipe has quickly become one of our favourites.
I think you can have a balance when it comes to Game Day food and low carb appetizers in general.
Isn't life all about balance?
A good balance of somewhat healthy and not-so-healthy.

WHAT INGREDIENTS DO YOU NEED TO MAKE THESE GLUTEN-FREE KETO MINI CORN DOG BITES
- almond flour and coconut flour
- baking powder, baking soda, and salt
- mustard, garlic and onion powder
- sour cream, cream cheese and shredded cheddar cheese
- egg
- chopped hot dog or sausage
- Optional - The BEST Keto Creamy Mustard Sauce - for dipping

HOW DO YOU MAKE THESE KETO MINI CORN DOG BITES?
- Preheat the oven to 400 degrees F.
- Grease or line a 24 cup muffin pan and set it aside.
- In a skillet, cook the hot dog until it begins to brown and set it aside
- In a large bowl, combine all the ingredients except for the cheese and hot dog, and stir to combine.
- Add the sausage and cheese and stir
- Drop 1 tablespoon of the mixture into each muffin well.
- Sprinkle with additional cheese, if desired
- Bake in the oven for 8-10 minutes or until golden brown on the edges.
- Allow to cool before removing the corn dog bites from the muffin well

DO I HAVE TO USE A MINI MUFFIN TIN TO MAKE THESE?
Although I love using my Structured Silicon Muffin pan, I liked the size of the mini muffin tin.
If you don't have a mini muffin tin, you can absolutely make these in a regular size muffin tray but you may need to increase the baking time just a bit.

CAN I MAKE THESE KETO MINI CORN DOG BITES AHEAD OF TIME?
Absolutely!
You can make these bites 1-2 days ahead of time and just simply reheat them in a 350-degree oven for about 5 minutes.
Or, you can make these and store them in the freezer for up to a month. To serve, simply preheat the oven to 350 degrees and place them in the oven for about 10 minutes.

WHAT TYPE OF DIFFERENT INGREDIENTS CAN I USE TO MAKE THESE KETO MINI CORN DOG BITES?
- Cheddar cheese is the go-to for anything with sausage because of its creamy, mild flavour and its ability to hold everything together, but don’t be shy about trying different kinds of cheese. Muenster or Pepper Jack would also be a great choice!
- Of course, bacon crumbles make everything even better!
- Add your favourite cooked sausage crumbles and veggies including bell peppers, onions and black olives!

Tips, Tricks and Substitutions:
- I used Paleo Andouille sausage but any hot dog or sausage will work
- Even if the sausage or hot dog you decide to use comes already cooked, I still suggest quickly browning it for a little extra flavour before adding it to your corn dog mix
- Make sure your ingredients are at room temperature so that they are easier to combine - if they are not at room temperature, make sure you beat the wet ingredients first before adding the dry ingredients
- Add 1-3 teaspoon of hot pepper sauce for an extra added kick
- feel free to make this plant-based by using plant-based sausage
- make sure you flatten each corn dog before baking - I fill a small ramekin with water and dip my fingers into the water before pressing each corn dog into the muffin well
- if you don't have any coconut flour, replace the coconut flour with ½ cup almond flour.

Ingredients
- 1 cup almond flour
- ¼ cup coconut flour
- 1 tbsp sweetener (any will work)
- 1 tsp baking powder
- 1 tsp garlic powder
- 1 tsp dried mustard powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup sour cream
- 1 egg
- ½ cup cheddar cheese, shredded
- ½ cup diced sausage (or hot dog)
- OPTIONAL - The BEST Keto Creamy Mustard Sauce for dipping
Instructions
- Preheat the oven to 400 degrees F. Grease or line a 24 cup mini muffin pan and set it aside.
- Dice hot dog and place it in a skillet on medium-high heat. Cook, stirring frequently until it begins to brown. Remove it from the heat and set it aside.
- In a large bowl, combine all the ingredients except for the hot dog and cheese, and stir to combine.
- Stir in the hot dog and cheese until fully incorporated. Divide the corn dog mix evenly between each mini muffin well (about 1 tablespoon of the mixture). Gently press the mixture into the well.
- Bake in the oven for 8-10 minutes or until golden brown on the edges.
- Allow to cool before removing the mini corn dog bites from muffin well
