These Healthy and Low Carb Mason Jar Mug Berry cakes are not only easy to make and healthy to eat but are the perfect size for any lunchbox. They only took minutes to prepare and Mr. Grumbles had a nice lunchtime treat all week!
Have you ever made a mug cake?
If not, a mug cake is merely cake ingredients stirred in a mug and cooked in the microwave. In about 1 minute, you have a simple single serving of delicious cake.
The only problem I have with mug cakes is there somewhat "spongy" nature.
Honestly, cake without a dense layer of frosting is not my cup of tea. Hence why you have yet to witness a mug cake on my blog!
However, mug cakes do remind me slightly of angel food cake.
When we were young, my Mum would layer chopped angel food cake with whipped cream and berries for the most delectable summer dessert.
As I have yet to master a gluten-free angel food cake, I decided to make mini versions of my Mum's truffle dessert using a simple mug cake recipe instead.
The best thing about these is how well they last in the fridge. The sponge cake lasted 5 days without going soggy so these can easily be made for an entire week of lunches.
How to make Mason Jar Mug Cake Parfaits
Step 1:
Chop your fruit into bite-size pieces.
Spray a large mug with cooking spray or grease it well with butter. I use an oversized mug so that I don't have to worry about my mug cake overflowing. Add 1 tablespoon of butter to the mug and place it in the microwave for 10 seconds. Once the butter has melted, add 1 tablespoon of vanilla protein powder, 1 tablespoon of almond milk, 1 egg and a pinch of salt.
Step 2:
Place mug in the microwave for 30 seconds. Stir the mug cake to allow for the cake to cook evenly. Continue to cook for another 30-45 seconds or until the cake has set.
Step 3:
Take 3 small mason jars and place a thin layer of chopped fruit on the bottom. Next, take a piece of your mug cake and crumble it on top of the fruit. Layer the cake with some whipped cream and add additional fruit on top of the cream. Place the lid tightly on the jar and set in the fridge until ready to eat.
Substitutions
Protein Powder - use regular almond flour or AP flour
Whipped Cream - you could use vanilla yogurt instead.
Almond Milk - Regular milk should also work.
Filling Ideas
- Use any leftover fruit that you have. Just be aware that certain fruit (ie. bananas and apples) turn brown when exposed to air
- Sprinkle some chocolate chips in between the layers
- Add some jam to the fruit if you need some extra sweetness.
Mason Jar Mug Cake Parfaits (Healthy, Gluten-Free, Keto)
A simply delicious mug cake is crumbled inside a mason jar layered with blueberries, strawberries and whipped cream. Seal the lid and store them in a fridge for a quick lunchbox healthy, gluten-free and keto snack.
- Total Time: 6 minutes
- Yield: 3 mason jar parfaits 1x
Ingredients
For the mug cake:
- 1 tbsp butter
- 1 tbsp protein powder (I use Orgain Vanilla Pea Protein Powder)
- 1 tbsp almond milk
- 1 egg
- pinch salt
- ⅛ tsp vanilla
For the Filling:
- ¼ cup chopped strawberries
- ¼ cup blueberries
- ¼ cup Whipping Cream
- 3 small mason jars with lids
Instructions
- Grease a large coffee mug. Add butter and microwave for 10 seconds to help melt butter. Add in all mug cake ingredients and stir to combine. Place in microwave for 30 seconds. Stir mug cake and return to microwave for another 30 seconds or until fully baked. Let cool and crumble cake when it has cooled down.
- Remove the lids from the mason jars and place a layer of fruit on the bottom of each jar. Top with crumbled mug cake, then whipped cream and add a finally layer of berries to the top. Seal the jars with their lids and return to the fridge until ready to be eaten.
