If you guys have been with me for a while, you know that I am a firm believer in fasting.
Not only does it give our bodies a break from digesting food but it also allows our bodies to actually heal, repair and destroy ineffective cells.
After reading many of Dr. Longo's studies, as well as many of his books, I am a firm believer that in order to age well as well as to achieve Optimal Health, fasting should be part of our health plan.
His book, The Longevity Diet, he explains how fasting is the key to living a longer, healthier, and fulfilled life. The book also includes 30 simple recipes for an everyday diet based on Longo’s five pillars of longevity.
The coolest thing about Dr. Longo is that he is truly studying and writing about fasting in order to help people.
I recently found out that all of the proceeds from sale of The Longevity Diet will be donated by the author to the non-profit Valter Longo Foundation and Create Cures to promote and sponsor research on inexpensive, alternative, and integrated therapies for such serious diseases as Alzheimer’s, cardiovascular diseases, diabetes, multiple sclerosis, Crohn’s disease, and other diseases, both in adults and children.

So, what are "Fast Bars"?
Well, Fast Bars are part of the "Fasting Mimicking Diet" which is sold under the name of Prolon.
Prolon was founded by Victor Longo, Ph.D., a professor at the University of Southern California.
Here is what the Prolon website says:

Honestly, I am not 100% a believer that you can get all the benefits of fasting while eating but I decided to order the bars anyway to see what they tasted like.
They are REALLY good!
With only a handful of ingredients, these bars were tasty and kept me full well over 4 hours!
The only problem...Man, are they ever expensive!!!
At over $4 a bar, I thought for sure they would contain tiny flecks of gold!
After doing a couple of experimental batches, I came up with a Homemade Keto Fasting bar that tastes just as good and has the exact same macros as the store-bought version of the bar.
I have had many readers thank me and tell me how good they taste.
And then one day, I had a reader send me an email asking if I could come up with a "nut-free" version of the bar.
As you all know, I LOVE a challenge and so this Nut-free Fasting Bar was born!

What ingredients do I need to make these Homemade Nut-Free Fasting Bites?
- roasted pumpkin seeds
- roasted sunflower seeds
- flax meal
- unsweetened coconut flakes (or chips)
- coconut flour
- coconut oil
- honey
- inulin
- seed butter (such as tahini, sunflower seed...)

What is Inulin?
According to an article by Medical New Today, inulin is a type of soluble fiber found in many plants.
Inulin is also fructan. Like other fructans, it is a prebiotic, meaning that it feeds the good bacteria in the gut.
Fructans are chains of fructose molecules. The molecules link together in a way that the small intestine cannot break down. Instead, they travel to the lower gut, where they feed beneficial gut bacteria.
The gut bacteria convert inulin and other prebiotics into short-chain fatty acids, which nourish colon cells and provide various other health benefits (1).
Plants containing inulin have been around for thousands of years, and some early humans consumed much more inulin than we do today.

What are the health benefits of Inulin?
Here is a list I found from Medical News Today:
- improves digestive health by feeding the "good" gut bacteria
- helps to relieve constipation
- helps to control diabetes
- helps to improve mineral absorption and bone health
- may improve heart health
- may help with IBD
- may help to prevent colon cancer
What if I don't have any inulin?
If you can't find any inulin at a health food store, you can always buy it on amazon.
I actually have a VERY hard time digesting inulin (maybe due to my gastroparesis?) so I have eliminated it from my bars when I make these at home.
Since inulin is not really adding much to the taste or texture of the bars, you can easily omit the ingredient altogether.
And, if you have a fructose-malabsorption issue, I highly suggest you NOT add the ingredient as you will find these bars hard to digest.

How do you make Homemade Nut-Free Fasting Bites?
- Place all the seeds and coconut in a food processor
- In a separate dish, mix all the liquid ingredients
- Turn the food processor on and slowly pour the liquid over the seeds - In total, the food processor should run for only 15-30 seconds.
How do you form these Homemade Nut-Free Fasting Bars?
You have two options:
- Form them into bars by pressing the mixture firmly in a loaf pan and allowing them to cool before slicing into 10 equal bars
- Take 1 tablespoon (about 14 grams) of the mixture and roll the "dough" into a circle and place them in the fridge to cool - you should have about 30 "bites" in total
If you decide to make these into bites (which is my favourite way of making them), 3 "bites" is equal to 1 bar.

How much money will you save by making your own Homemade Nut-Free Fasting Bites?
- Fast Bars average about $4 each with shipping and handling.
- When I totalled my costs of making these bars, the total for all 10 bars was about $7.39.
- You will be saving $3.26 per bar.
That's a savings of $16.30 per box of 5 bars!!!

How should you store these Homemade Nut-Free Keto Fasting Bars?
You can store these bars in an airtight container at room temperature for 5 days. You can also store them in the fridge for 2 weeks or in the freezer for up to 3 months.

Ingredients
- 1 cup (132 g or 4.6 oz) roasted sunflower seeds
- ½ cup (56 g or 2 oz) roasted pumpkin seeds
- 2 tbsp (14 g) flax meal
- 1 cup (80 g or 2.8 oz) unsweetened shredded coconut
- 2 tbsp (18 g) coconut flour
- 4 tbsp honey, raw
- 1 tbsp coconut oil
- 2 tbsp unsweetened sunflower seed butter
- OPTIONAL - 20 g inulin powder
Instructions
- Place all the seeds and coconut in a food processor. In a separate dish, mix all the liquid ingredients.
- Turn the food processor on and slowly pour the liquid over the seeds - In total, the food processor should run for only 15-30 seconds.
- Press the mixture into a loaf pan or form into bites - place them in the fridge to cool and solidify.

- You can use a 9 x 5 loaf pan and cut the mixture into 10 bars
- you can use 1 tablespoon and form it into a bite to create 30 bites

Eliminating the honey will absolutely change the nutritional value but they should still be ok for fasting. Did you replace the honey with a different type of sweetener or just leave it out completely?
