Easy Keto Halloween Mozzarella Bread Sticks - These Keto Homemade Breadsticks are shaped into a spider web for the perfect Halloween treat. Light, buttery, and oh so delicious, these keto breadsticks are topped with a delicious garlic butter Parmesan topping! Easily made with just a bowl and a spoon, these low-carb breadsticks are the simplest breadstick recipe ever!

These delicious keto Italian garlic breadsticks are ones that I have been making for quite a while now.
Why was I holding out on you all, you may be wondering? Honestly, I just didn't think it was unique enough. With sooooo many keto fat head and other such bread recipes on the internet, I just hadn't bothered to actually post a recipe for the one I use as my "go-to" keto bread.
But, when I saw this amazing spider web bread from the gal at The Frugal Homestead, I thought I would try to see if I could shape my keto bread like a spider web as well.

KETO BREADSTICKS
I grew up with a Mum who made all her bread from scratch and dinner was never served without a side of the bread of some sort.
Traditionally found alongside large bowls of pasta, breadsticks are no longer a staple in our house. Since going gluten-free and low carb, our family of two have been forced to modify our old "wheat ways" and had to come up with alternatives for these high carb bread dishes.
Made from a modified Fathead dough, these garlic Parmesan breadsticks are easy to make and taste as good as any regular gluten-laden breadstick.
And, since they only have about 4 grams of net carbs per serving, you can have your bread and eat it too!

What I LOVE about this recipe:
- Light and airy: The breadstick dough bakes up so fluffy and soft as you can tell by how much thicker my breadsticks are compared to The Frugal Homestead
- Adaptable: You can make these breadsticks into a homemade keto Olive Garden version by adding the garlic butter and Parmesan or you can use any other toppings and dipping sauces
- Freezer friendly: You can freeze the dough after baking and simply pull them out of the freezer, pop them into the microwave for a couple of seconds and voila!...bread craving be gone!
Ingredients for Keto Garlic Breadsticks:
Mozzarella cheese: The BEST and foolproof cheese to make any keto fathead dough is to use full-fat mozzarella that has NOT already be shredded. Prepackaged shredded cheese contains anti-caking ingredients which do not allow the cheese to be easily blended into the cream cheese. Shred your own cheese for guaranteed success with this recipe.
Cream Cheese: Again, make sure that you are using full-fat and not low fat or fat-free cream cheese as these last two types will contain some sort of binding agent that will make it very difficult to blend
Eggs - In this recipe, we are using two eggs that are whisked with an additional egg yolk. Make sure that you whisk the eggs prior to adding them to the cheese mixture. Also, make sure that your eggs are at room temperature so that they don't cool down the cheese too much so that it hardens again. You also have to make sure that the cheese is not too hot that you risk the chance of cooking the eggs when you incorporate them.
Almond Flour: Super-fine almond flour must be used otherwise you will not be able to mix it thoroughly into the cheese
Whey Protein Powder - Use plain whey protein powder which helps to get the breadsticks to rise. If you don't have any, you can omit this ingredient but your breadsticks may not rise as much.
Xanthan Gum - Again, if you don't have any xanthan gum, you can omit this ingredient. However, xanthan gum helps to create the chewiness that we all love when it comes to bread!
Baking Powder - We are using quite a bit compared to most recipes but it will help to give each breadstick that nice and rounded look that is perfect for the delicious garlic butter to melt down its sides!
Seasoning: I used an Italian seasoning blend but you can use any type of seasoning you want.
Keto Butter Garlic Parmesan Topping
Although you definitely do not have to top the bread with any topping as it tastes great on its own, I was craving a little garlic in my life so I brushed the tops of the web with a basic garlic butter and then sprinkled the Parmesan cheese over the entire web.
To make the garlic butter, simple microwave 2 tablespoons of butter until it has melted. Then, stir in about ¼ teaspoon garlic powder and about ⅛ teaspoon of salt.
Taste the mixture and feel free to adjust it according to your taste buds. Just an FYI - If you use salted butter, do NOT add the additional salt.
Making the spider web
Making bread shaped like a spider web is actually quite easy!
Take a piece of parchment paper and draw a spider web that is about the size of a pizza pan. Next, take a small ramekin (if you are serving the bread with dipping sauce. If not, you can omit this step) and place it in the center of the web. Trace the bottom of the ramekin onto the parchment paper.
Flip the parchment paper over and start forming your breadsticks to match your spider web template!

Making Keto Breadsticks
- Microwave the cheese and cream cheese together until they have melted
- Stir in the egg and then add all the remaining ingredients
- Place dough in the fridge to cool for about 30 minutes (it makes it easier to shape)
- Remove ¼ of the dough (about 100 grams) and divide it into 8 sections - roll each section into thin rope-like shapes
- Place each rope on the smaller sections of the web
- Take the remaining dough, and divide it into 16 sections and roll each section into a slightly longer rope - these will be the "star" section of the web and the top of the web.

- Bake the web for about 15-18 minutes or until the top just begins to brown

- Brush the top of the bread with the garlic butter, sprinkle it with Parmesan cheese and add the pizza sauce filled ramekin in the center
- ENJOY!

Storing and Reheating Keto Bread
Store in an airtight container or bag for up to 5 days. Wrap in foil and reheat in an oven preheated to 300 degrees Fahrenheit for 7-10 minutes.
You can also take the frozen breadsticks and place them in the microwave for about 20-30 seconds or until they are nice and warm!
Breadstick Toppings and Variations:
- Garlic Butter topping (Olive Garden style): combine 2 Tablespoons salted butter and ¼ teaspoon garlic powder. Mix and spread over warm breadsticks from the oven.
- Cheesy Breadsticks: After rolling out the breadstick dough and placing on a baking sheet, spread the uncooked breadsticks with melted butter. Sprinkle ½ cup finely shredded cheese on top (I like to use ¼ cup parmesan cheese and ¼ cup mozzarella cheese). Bake as directed.
- Little Caesars Crazy Bread: top with garlic butter (above) and sprinkle parmesan cheese on top
- Cinnamon Sugar Breadsticks: Instead of adding the Italian seasoning, replace it with some sweetener and cinnamon. After forming the dough spread the uncooked breadsticks with 2 Tablespoons melted butter. Combine ¼ cup granulated sweetener and 1 ½ teaspoons of cinnamon and sprinkle over the breadsticks.Bake as directed.
- Dipping sauce: Keto Chimichurri Sauce, Keto Creamy Mustard Sauce, or a Healthy Garlic Cream Sauce

Keto Halloween Bread Sticks
- Total Time: 30 minutes

Ingredients
For the Breadsticks
- 250 grams full-fat mozzarella, shredded
- 4 ounces cream cheese, cut into cubes
- 2 large eggs
- 1 egg yolk
- 8 ounces almond flour
- 1 tbsp plain whey protein powder (OPTIONAL)
- 1 tsp baking powder
- ⅛ tsp xantham gum (OPTIONAL)
- 1 tbsp Italian or Pizza Seasoning
- 2 teaspoons garlic powder (OPTIONAL)
- 1 tablespoon baking powder
Topping
- 2 tablespoons butter melted
- ¼ tsp (or more) garlic powder
- ⅛ tsp (or more) salt
- 1 tbsp Parmesan cheese
For the Dip:
- ¼-½ cup Rao's (or other low carb pizza sauce) pizza sauce
Instructions
- In a small bowl, whisk together the eggs and egg yolk. Set the bowl to the side.
- In a bowl add the mozzarella and cream cheese. Melt in the microwave for 90 seconds, stir halfway through to ensure even melting.
- Add the beaten eggs, seasoning, baking powder and almond flour and mix into the dough, making sure all ingredients are combined well.
- Place the dough in the fridge to chill for 30 minutes. This helps firm it and reduces the stickiness.
- Pre-heat the oven to 180C/350F degrees and line a baking tray with parchment paper.
- Shape the bread into a spider web (see post for detailed instructions)
- Place the breadsticks on the baking tray and bake for 15-18 minutes or until golden.
- While the breadsticks bake, prepare the garlic butter topping by melting the butter and stirring in the salt and garlic powder. Taste the mixture and add any additional salt or garlic powder to suit your tastes. When the breadsticks have baked, brush the garlic butter over the breadsticks and sprinkle the breadsticks with Parmesan cheese.
- Place the pizza sauce in the same ramekin that you traced onto the parchment paper and heat it in the microwave for about 30 seconds or until hot. Place the ramekin in the center of the web and enjoy!

- Keep a little coconut oil in a small dish by your side when you are shaping the web to help with the stickiness of the dough
