Cranberry Pistachio Muffins Keto-fied!
I have only recently been exploring recipes that use cranberries as a star ingredient.
From my Keto Cranberry White Chocolate Chip Cookies as well as my Keto Cranberry Cream Cheese Bars - Nut-Free, I have recently found my new love - Cranberries.
It seems that cranberries are an underrated fall flavour, lost in all that pumpkin, apples, and cinnamon baked goods, and so I have taken it upon myself (and my readers) to create more easy and delicious cranberry recipes.
After making loving white chocolate combined with cranberries, I decided to try a nuttier spin and hence the Cranberry Pistachio Muffins were created!

Where do cranberries come from?
Cranberries are a type of fruit that grows on short shrubs. Cranberries are one of only three fruits native to North America.
Aptly called a super fruit, cranberries are known for their astonishing array of phytonutrients (plant compounds that are reported to have antioxidant, anti-inflammatory and anti-cancer health benefits).
To harvest the cranberries from the bush, the bog is flooded with up to 18 inches of water the night before the berries are to be harvested.
The growers then use water reels, nicknamed “eggbeaters,” to churn the water and loosen the cranberries from the vine.

Can you eat raw cranberries?
Absolutely!
Cranberries are insanely healthy and are low in calories, high fibre, high in vitamin C and have a TON of cancer-fighting antioxidants.
Pulse them into a relish, or blend them up into a super nutritious smoothie.
Are cranberries high in carbs?
A cup of raw cranberries contains 46 calories. 0 grams of fat. 12 grams of carbohydrates.
Since this recipe will make at least 12 muffins, the delicious and healthy nutrition of cranberries greatly outweighs their amount of carbs!

What ingredients do you need for these Keto Cranberry Pistachio Muffins?
- almond flour
- whey
- baking powder and baking soda
- salt
- egg
- sweetener
- cream cheese
- sour cream
- pistachios shelled
- coconut oil
- cranberries-fresh or frozen

Why do you use both almond flour and coconut flour?
The combination of these two flours makes the perfect muffins.
The flours are both high in fibre and therefore help to keep the muffins moist but also help to give the muffins some structure.
Why do you use whey protein powder in this muffin recipe?
Since these muffins are gluten-free, the protein powder helps to add the missing protein which is contained in gluten.
By adding whey protein, the muffins will also rise much more than if you do not use any whey protein powder. However, if you don't have any and do not want to use any whey protein powder, you can replace it with more almond flour but your muffins will be denser.

What kind of sugar substitute can I use in these muffins?
I have made these muffins with both Allulose and Erythritol-based sweeteners. Both types of sweeteners worked perfectly well.

How do you make these Keto Cranberry Pistachio Muffins?
- Preheat the oven to 400 degrees F.
- Grease or line a 12 cup muffin pan and set it aside.
- In a large bowl, combine all the muffin ingredients except for the cranberries and the pistachios and stir to combine.
- Fold in the chopped cranberries and the pistachios
- Divide the muffin mixture equally into each muffin well.
- Add additional chopped cranberries on the top of each muffin for decoration
- Bake in the oven for 20-25 minutes or until the top of the muffin springs back when poked
- Allow cooling before removing the muffins from muffin well

How do you store these Keto Cranberry Pistachio Muffins?
These muffins will last in an airtight container at room temperature for up to 5 days or in the fridge for 7 days.
You can also freeze these muffins for up to 1 month.
Can I use frozen cranberries instead of fresh cranberries?
Absolutely! Just make sure you allow the frozen cranberries to come to room temperature before adding them to the muffin mix.

Tips and Tricks:
- I use my Vitamix to dice my cranberries and my pistachios sometimes to make the process easier
- if using frozen cranberries, allow them to come to room temperature
- if using unsalted pistachios, add ⅛-1/4 teaspoon of salt to the recipe
- you can eliminate the pistachios altogether
- make sure your ingredients are all at room temperature otherwise, the coconut oil will not mix well into the ingredients
- if you use muffin liners, you may end up with about ¼ cup batter too much - I have used my silicon muffin tin without liners and you can 12 muffins but with the liner, I end up with about 13 muffins so I place some in a small ramekin
- if you like orange and cranberry, simply add 2 tablespoon light Orange Juice and 1 tablespoon of orange zest to the muffin mix for Keto Cranberry Orange Muffins!
- use any type of sweetener on the market

Ingredients
- 1 ½ cups almond flour
- ½ cup coconut flour
- ¼ whey
- ½ cup sugar substitute
- 2 tsp baking powder
- 1 tsp baking soda
- 1 cup sour cream, room temperature
- 3 eggs, room temperature
- 4 tbsp cream cheese, softened
- ½ cup coconut oil
- 1 cup cranberries, chopped
- ½ cup pistachios, shelled, salted and chopped
Optional Topping:
- erythritol sugar substitute
Instructions
- Preheat the oven to 400 degrees F. Grease or line a 12 cup muffin pan and set it aside.
- In a large bowl, combine all the ingredients except for the cranberries and the pistachios and stir to combine.
- Fold in the diced cranberries and the pistachios.
- Evenly divide the muffin batter to each muffin well
- Stick a few extra diced cranberry on the top of each muffin for decoration and sprinkle with brown sugar substitute (if desire).
- Bake in the oven for 20 minutes or until the top of the muffin springs back when poked
- Allow cooling before removing the muffins from muffin well
Notes
- if your pistachios are not salted, add about ⅛-1/4 teaspoon of salt to the recipe
- if your cranberries are frozen, allow them to come to room temperature
- I throw the cranberries and pistachios in my Vitamix for 15 seconds to dice them
- Net carbs = 5.8 grams
- each muffin is 80% fat which fits into a keto diet
