Bacon Jam Recipe
This Bacon Jam recipe is literally the best in the world.
I know that's a HUGE statement, but I've been told that so many times that I have to believe it.
And it is sooooo easy to make!
All you have to do is slowly simmer bacon, onions, brown sugar substitute, coffee, and apple cider vinegar until they become thick and jam-like. Perfect for the upcoming holidays, you can serve it as a spread for a delicious cheese platter!
I've tried a few bacon jams before (but never tried making one), and they've all been pretty darn tasty but WAY TOO SWEET. So I knew that I had to come up with my own version that would be classified as keto-friendly and sugar-free.
How hard could it be when you start with some of the tastiest ingredients?!!

Ingredients
Bacon - I think this is a given, right?!!! Since this is the main ingredient for the jam, make sure that you use high-quality bacon. And don't even think of substituting turkey bacon in this recipe - sacrilegious at its best!
Shallot or Onion- Shallots have a delicate and sweet flavour with a hint of sharpness. Compared to onions, they have a much milder heat and have a little garlic flare to them. Red or another type of onions like Vidalia can also be used.
Thyme - Generally, thyme will have a sharp, almost minty flavour. It is earthy with floral hints and is a little bit sweet and a little bit peppery. If you don't have fresh thyme, you can omit it completely.
Sugar-Free Maple Syrup - You can't make "maple" jam without adding some maple syrup! I used ChocZero maple syrup but any brand will work. IF you don't have any sugar-free maple syrup, you can omit it entirely and add additional brown sugar substitute.
Brown Sugar Substitute - This jam has to have a sweet taste so brown sugar substitute is the key to accomplishing the level of sweetness needed. You can use either Swerve or Lakanto
Balsamic Vinegar - Balsamic vinegar is a very dark, concentrated, and intensely flavoured vinegar originating in Italy, made wholly or partially from grapes. We are only adding this ingredient after the jam has cooked down as heating it will kill its distinct flavour.
Brewed Coffee - Adding this ingredient adds a nice depth to the jam. All you have to do is brew a slightly larger pot in the morning and reserve some for your jam!
Chili Powder - This ingredient is optional but it does add a nice little extra kick to your jam!

BACON JAM GAME PLAN:
- Heat the oil in a cast-iron pan on medium heat
- Add the bacon and cook until beginning to brown, 8-10 minutes
- Add the onion and thyme and reduce the heat to low.
- Cook for 10 to 12 minutes, then remove the thyme sticks and transfer the bacon and onion from the pan with a slotted spoon into a small saucepan (reserve the bacon fat and place it in the fridge for a later use!)
- Add the brown sugar substitute and coffee to the mixture
- Cook over medium-low heat until it thickens, about 25-30 minutes
- Stir in the balsamic vinegar, maple syrup and chili powder (if using)
- ENJOY

Storing the jam
I can guarantee you that this jam will not last long; however, if you do have any leftover, simply place the jam in an airtight jar and place it in the fridge for up to 1 week.
To use the jam, allow it to come to room temperature and stir the jam to incorporate any of the fat that has separated after the jam has cooled.
You can also freeze this jam. When you are ready to use it, you can just allow it to come to room temperature in the fridge. If any fat has separated, just stir it to incorporate it back into the jam.
If you are in a hurry, you can always take the jam and heat it at 50% in your microwave until it thaws.
Want more jam?
This recipe makes about 1 cup of jam. Since it is so easy to make and does only last about 7 days in the fridge, I like making this recipe slightly smaller.

Can you can this jam?
Heck no! Because this is a meat-based jam, you can not can it nor can you store it at room temperature.

Ingredients
- 1 onion, diced (or 3-4 shallots, diced)
- 8 oz bacon, roughly chopped
- 2 sprigs fresh thyme
- ¼ cup brown sugar substitute
- ¼ cup strong brewed coffee
- 2 tbsp sugar-free maple syrup
- 1 tbsp balsamic vinegar
- 1 tsp chili powder - OPTIONAL
Instructions
- Heat a large skillet on medium-low heat. Add the bacon and thyme and cook for about 10 minutes or until it just begins to crisp (about 8-10 minutes), stirring every so often. Add the onion to the skillet and continue to cook until the onion begins to brown, about 6-7 minutes. Using a slotted spoon, transfer the mixture to a small saucepan. Reserve the bacon fat for later use (it can be stored in the fridge for about 1 month)
- Heat the saucepan with the bacon and onion mixture on medium-low heat. Add in the brown sugar substitute and coffee. Cook the mixture down to a thick consistency, 25 to 30 minutes.
- Stir in the balsamic vinegar, sugar-free maple syrup, and chili powder (if using). Store the bacon jam in an airtight container in the fridge for about 1 week.
Notes
- the bacon fat will separate in the fridge - heat the jam slightly and stir the fat back into the jam before using.
- don't overcook the bacon as it will get too crispy
- if you cook the jam too long, the erythritol in the sweetener with crystallize and harden
