I purposefully decided to post this recipe in the middle of the week because it is perfect for a fast weeknight meal. Within 5 minutes, you can prep this Whole30 Air Fried Chicken and 30 minutes later be sitting down to a delicious, healthy supper!
This recipe was inspired by coconut shrimp. Why you ask? Well, I love coconut shrimp but every time I have tried to make a gluten-free "healthy" version, it never comes out quite right.
Since I had some chicken thighs in my fridge, I contemplated making a "coconut chicken" version as I was craving coconut shrimp. The problem was, it was already 5:30 p.m and honestly, I was exhausted. The thought of dredging chicken through the egg, then batter, then egg, then coconut was truly appalling. Plus, the mess I would make, was enough for me to can that idea.
The Solution...Whole30 Air Fried Chicken!
How do you make Whole30 Air Fried Chicken
- Grab some coconut flour, coconut flakes, almond flour and a couple of spices and tossed them in a large bowl.
- Place the chicken thighs into the mixture, tossed them around to completely cover all sides of the chicken
- Place chicken in the air fryer and set for 20 minutes
Juicy, tender and crispy with only 1 bowl to clean!
In under 5 minutes of prep work and only 5 minutes of clean up, this coconut chicken is a definite "go-to" on a busy weeknight.
How do you make this Whole30 Air Fried Chicken without an Air Fryer?
- Simply place the chicken in the oven at 375 for 30 minutes or until the internal temperature of the chicken hits 165 degrees F.
- If it doesn't get quite as crispy as you would like, turn the oven onto "broil" and place the chicken on the top rack of the oven for 3-5 minutes.
- MAKE SURE YOU STAY CLOSE TO THE OVEN as the chicken will burn easily.
