What are the different types of cucumbers?
There are 3 main types of cucumbers: slicing, pickling and seedless.
For this recipe, either slicing or seedless will work.
Slicing Cucumbers:
- Pros - they are the cheapest variety and easiest to find
- Cons - they have a tougher skin, larger seeds and can be slightly on the bitter side
Seedless Cucumbers:
- Pros: the skin is less tough and is less bitter
- Cons: they are more expensive and a little harder to find
For this recipe, either variety will work.
What ingredients do you need to make this Keto Cucumber Dill Salad?
- Greek yogurt (or sour cream)
- apple cider vinegar
- Dijon mustard
- cucumbers
- large shallot
- dill
- salt
- extra-virgin olive oil
What can I use instead of Greek Yogurt?
You can replace the Greek yogurt with either sour cream or mayo.. You may need to adjust the amount of other ingredients to accomodate the slight variation of flavours.
Also, you could use Mexican Crema or Creme Fraiche which are both very similar to sour cream but have a slightly higher fat content.
Can I use light or fat-free Greek yogurt?
Although I have not tried it, I do not see why you could not use lighter Greek Yogurt or sour cream. If you are going to use a lighter version of sour cream, try to find one with the least amount of added ingredients as the more additives, the unhealthier the product
Can I add any spices or herbs?
Absolutely!
Since I wanted to keep the recipe REALLY simple, I did not include any herbs. However, fresh parsley or some roasted garlic would add a nice little flavour kick.
How do you make this healthy Keto Cucumber Dill Salad?
- peel the cucumber and toss it with a pinch of salt to help draw out some of the liquid from the cucumbers
- allow to sit for about 30 minutes
- while you are waiting for the water to draw out of the cucumber, combine all the remaining ingredients and stir to combine.
- when ready to serve, add in the cucumber and toss to coat

Ingredients
- 2 English cucumbers, halved and thinly sliced
- 2 tsp kosher salt
- ⅓ cup plain Greek Yogurt (or Sour Cream)
- 2 tsp - 1 tablespoon Dijon mustard (depending on your taste!)
- 4 tsp apple cider vinegar
- 1 tbsp extra-virgin olive oil
- 1 large shallot, halved and thinly sliced
- ¼ cup fresh dill
Instructions
- Add sliced cucumbers to a colander and toss with a pinch of salt. Place the colander over a bowl and set in the fridge to help draw water from cucumber for 30 minutes.
- In a large bowl, whisk the yogurt, vinegar, oil and mustard together and set it aside
- Gently shake colander to drain excess liquid from cucumbers. Blot cucumbers with paper towel. Add the cucumbers to the dressing and toss gently to combine. Add in dill and season with additional salt and pepper to taste.

- You can use full fat Greek Yogurt or Fat Free
- You can replace the Greek Yogurt with full fat sour cream for a higher fat grams
