We have finally had a couple of days of cold weather. Well, maybe that's a slight exaggeration but for us Floridians, anything under 70 degrees is considered cold! With the drop in temperature, this Whole30 Chicken Taco Soup was the perfect way for Mr. Grumbles and me to stay warm.
I personally love the cooler weather.
What is not to love about snuggling up in a cozy warm sweater, throwing on layers of clothes and last but not least, zipping up those beautiful new winter boots!
Growing up in Canada, the cold was not something we ever evened talked about. It's kind of a given that it's going to get cold.
However, since moving to Florida, I am forever longing for a cooler day.
This week, with the night time temperatures hitting just below 50 degrees, we can definitely tell that the winter season is upon us.
Honestly, I actually LOVE the drop in temperature. The change in temperature definitely changes what type of cooking I like to do.
Let's face it when it is over 90 degrees outside, the last thing you feel like doing is slaving over a hot stove. But, with the cooler weather, soup, chili and casseroles are recipes dancing around in my head!
Since work has been a bit crazy lately, I needed to create a quick and easy recipe.
I don't know about you, but when I get home after a 10-hour workday, the last thing I want to do is start cooking.
So, out of sheer need, I created a "throw-everything-in-a-slow-cooker-and-forget-it" soup.
Seriously, this soup is super easy as well as healthy and Whole30 approved.
Are you ready for the instructions?
Throw all of the ingredients in the slow cooker, set it for 4-8 hours and come home to a wonderfully flavorful soup!
