Who doesn't love pulled pork!

I could absolutely eat pulled pork at every meal, on everyday of the year! The crispiness of the pork is really what does it for me. With that being said, smoking a pork shoulder for 12 hours to get the skin nice and crispy is NOT conducive to my work schedule.
What IS conducive to my work schedule is putting a pork shoulder, butt or loin in the crock pot. Set it and forget it...who doesn't love a slow cooker! The only small (ok, let’s be honest, BIG) problem is the lack of the crispy texture. Soggy pork just doesn’t do it for me.
There is no arguing that slow cooking a pork shoulder results in a ridiculously tender piece of meat. However, I knew I had to find a way to get a nice, crispy outer crust without the use of a smoker.
One day, after slow cooking and pulling the pork , I decided to try and season it AFTER I had finished pulling it apart. I placed the newly seasoned pulled pork in a pan and stuck it under the broiler for about 5 minutes.
This is when the magic happened!
I was amazed at how crispy the pulled pork had become with such a minor and simple extra step! Even Mr. Grumbles (AKA - Husband) was amazed at deliciousness of the final product. I was ecstatic! Finally, I had come up with an easy way to get crispy pulled pork straight from the crock pot!
The Execution
There always seem to a lot of liquid after slow cooking a pork shoulder or loin.
With this in mind, I decided to keep the dry rub to a minimum. Instead, I added a heavy dose of dry rub after pulling the pork. Making sure that the pork is fully covered is key to ensuring a flavorful pulled pork.
Place the pulled pork on a baking sheet and place it under the broiler for about 5 minutes. Watch it carefully as it can burn. And there you have it....crispy pulled pork from the crock pot!

Crispy Slow Cooker Pulled Pork (Whole30, Keto, GF)
Crispy pulled pork first made in a slow cooker and then seasoned and placed under the broiler for the final touch.
- Total Time: 8 hours 10 minutes
- Yield: 8 servings 1x
Ingredients
- 3 tbsp black pepper
- 1.5 tbsp garlic powder
- 3 tbsp salt
- 1.5 tbsp smoked paprika
- 1.5 tsp onion powder
- 4-6 lbs pork shoulder (can also substitute pork loin)
Instructions
- Place all the dry ingredients in a bowl and mix until combined
- Remove some of the fat from the pork shoulder or loin. Using a knife, make small incisions in pork. Using ¼th of the dry rub, cover pork.
- Place in the fridge for 12 - 24 hours.
- Once pork has marinated, place pork in slow cooker and set on high for 4 hours or on low for 8 hours
- Once cooked, remove pork and let cool. When cool enough to handle, pull pork and spread pork onto a large baking pan.
- Take remainder of the dry rub and cover the pulled pork with the dry rub making sure to cover all the pork.
- Turn the broiler on high and place pulled pork on top rack of oven and broil for 5 minutes. Watch carefully as it can burn.
Notes
- Be CAREFUL when opening the oven while the pork is on broil. The steam from the oven will be hot.
