Winner winner chicken dinner! This Whole30 5-minute Chicken Souvlaki recipe is bound to get you excited for chicken again. Let's face it, chicken can get pretty boring sometimes. Also, chicken can end up dry by the time it is cooked, but not anymore! In under 5-minutes of prep time and under 15 minutes to grill, you can have a delicious and healthy dinner in no time.
I am always amazed at how easily I can convince myself that something is "to labour intensive". Chicken skewers seem to have fallen into that mental space in my head.
Do you ever do that sometimes? I mean seriously, how hard is it to cut up chicken and thread it on some skewers?
Answer: Not very!
So, the other mental time hurdle is having to plan ahead to make sure that you soak your wood skewers for 15 minutes in water before using them. Well, I am here to tell you that you actually don't have to soak them for that long.
What?!!!!!! Won't the skewers burn, you ask?
Answer: A little... but, who cares!
Are you going to reuse the skewers...Not likely so do you care if they burn? I soaked mine for 5 minutes and that was all folks. The skewers did burn a little but the part of the skewer that was covered in chicken stayed moist.
Once these two "time-sucking" steps had been freed from my brain space, I decided to create a chicken souvlaki recipe.
The word "souvlaki" comes from the Greek word meaning skewers...pretty creative, right!:-)
How do you make Whole30 5-minute Chicken Souvlaki
- First, I cut up my chicken into 1-inch cubes and marinated them overnight.
- Next, I cut up some red onion, zucchini and red bell pepper and tossed them in some olive oil and spices.
- Lastly, I threaded the vegetables with the chicken onto the skewers.
Since I live in Florida, I am lucky to be able to grill at any time of the year.
If you live in the North, these skewers can also be baked in the oven at 400 degrees F for 20-30 minutes or until the internal temperature reads 165 degrees F.
Serve these skewers with my homemade Simple Vegan Tzatziki Sauce sauce and a side of my Roasted Brussels Sprouts Onion and Bacon, Air Fryer Baked Potatoes or my amazing Homemade French Fries.

Chicken Souvlaki (Whole30, Low Carb)
Chicken breast meat marinated in Greek spices and then cooked on skewers creates this deliciously healthy chicken souvlaki. Easy to make and ridiculously juicy, this is a wonderful way to get excited about chicken again!
- Total Time: 2 hours 30 minutes
- Yield: 4 skewers 1x
Ingredients
- 4 chicken breast, boneless, skinless, cubed
- 1 zucchini, sliced
- 1 red pepper, cubed
- 1 red onion, cubed
- 1 tbsp olive oil
- 1 tbsp oregano
- 1 tbsp garlic, minced
- 1 tbsp onion powder
- 1 tsp salt
- ½ tsp pepper
- 4-5 skewers (if wooden, soaked in water about 5 minutes)
Instructions
- If using, place wooden skewers in water to soak.
- Chop the chicken into equal bite size pieces. Place in a large bowl.
- Chop vegetables and add to chicken.
- In a small bowl, combine olive oil and spices and mix well. Pour over chicken and vegetables and place in fridge for 2 hours or overnight.
- Alternate chicken with vegetables and thread onto skewers.
Oven Method:
- Preheat oven to 400 degrees F. Line a baking sheet with foil and place skewers on baking sheet. Bake 20-30 minutes, turning half way, or until internal temperature reaches 165 degrees F.
Grill Method:
- Preheat grill to 300 degrees F. Place skewers on grill and cook for 10-15 minutes, turning every 5 minutes, until cooked to 165 degrees F.

- Swap out the vegetables for whatever you have on hand.
