Chicken breast meat marinated in Greek spices and then cooked on skewers creates this deliciously healthy chicken souvlaki. Easy to make and ridiculously juicy, this is a wonderful way to get excited about chicken again! 

  • Total Time: 2 hours 30 minutes
  • Yield: 4 skewers 1x

Ingredients

Scale
  • 4 chicken breast, boneless, skinless, cubed
  • 1 zucchini, sliced
  • 1 red pepper, cubed
  • 1 red onion, cubed
  • 1 tbsp olive oil
  • 1 tbsp oregano
  • 1 tbsp garlic, minced
  • 1 tbsp onion powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4-5 skewers (if wooden, soaked in water about 5 minutes)

Instructions

  1. If using, place wooden skewers in water to soak.
  2. Chop the chicken into equal bite size pieces.  Place in a large bowl.
  3. Chop vegetables and add to chicken.
  4. In a small bowl, combine olive oil and spices and mix well.  Pour over chicken and vegetables and place in fridge for 2 hours or overnight.
  5. Alternate chicken with vegetables and thread onto skewers.

Oven Method:

  1. Preheat oven to 400 degrees F.  Line a baking sheet with foil and place skewers on baking sheet.  Bake 20-30 minutes, turning half way, or until internal temperature reaches 165 degrees F.

Grill Method:

  1. Preheat grill to 300 degrees F.  Place skewers on grill and cook for 10-15 minutes, turning every 5 minutes, until cooked to 165 degrees F.
