I'm sure you have all heard of enveloping brie with a delicious crust and baking it in the oven. Indulgent and delicious, it was an appetizer I was dearly missing since I've been told that I may have celiacs. That's why I decided to come up with this Caramelized Onion Strawberry Baked Brie. Easy and absolutely delicious!
How can you "maybe" have celiacs? Well, it turns out that through some genetic testing and some lab work, I have several results that have come back indicating celiacs. However, the gold standard test for celiacs which involves an intestinal (duodenal) biopsy has come back negative.
So, with these mixed diagnoses, I am trying hard to eliminate all wheat products from my diet.
Brie baked in phyllo or a pie crust would definitely not be included in my "gluten-free" world so I knew I needed to come up with a different recipe to satisfy my tastes.
With that being said, I have yet to find or create a gluten-free version of phyllo or puffed pastry dough.
Sometimes, things are just not worth recreating in a gluten-free way...phyllo and puffed pastry are filed under that category.
So, I decided to see what would happen in I caramelized some onions, added some homemade sugar-free strawberries and baked the whole thing in the oven.
What came out of the oven was a beautiful harmony of sweetness combined with the salty brine of the brie. Although not as pretty as the original, the fact that it melted and expanded made it the perfect gooey spread with deliciousness packed into every bite!
How to make Caramelized Onion Strawberry Baked Brie
Step 1:
- Gather all your ingredients.
- Take the brie and slice it in half.
Step 2:
- Slice the onion and the strawberries.
- In a small saucepan, add the strawberries, 2 tablespoon of water and a little sweetener.
- Bring the mixture to a simmer and continue to cook for approximately 5 minutes or until strawberries soften.
- Add a tablespoon of balsamic vinegar and set it aside.
- In a large skillet, add 1 tablespoon of olive oil.
- Once the oil has heated, add onion and 1 teaspoon of salt.
- Continue to cook the onions, stirring every so often on medium heat until onions begin to brown (approximately 20 minutes).
Step 3:
- Next, take your cast iron skillet or any other oven-proof skillet and place a third of the onion and strawberry mixture on the bottom.
- Next, place ½ of the brie wheel on top.
- Add another strawberry onion layer and top with the other half of the brie.
- Finally, place the remaining onion strawberry mixture over the entire top of the brie and place it in the oven.
Because it is not baked in a phyllo or pie crust, the brie will meltdown.
This allows for every bite to be filled with a combination of salty and sweet deliciousness!

Caramelized Onion and Strawberry Baked Brie (Keto, Gluten-Free)
Caramelized onion comes together with strawberries and brie to create a delicious keto, gluten-free appetizer. Salty and sweet, this easy low carb appetizer is sure to impress your guests.
- Total Time: 35 minutes

Ingredients
- 1 large sweet onion, sliced
- 1 cup diced strawberries
- 6 oz Triple Creme Goat Brie
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 -2 teaspoon sweetener (you may not need this is your strawberries are sweet enough)
- 1-2 tablespoon water
Instructions
- Preheat oven to 350 degrees F. Slice brie wheel in half and set aside.
- In a large skillet, place oil and heat on medium. Add sliced onion. Continue to cook, stirring often until onions soften and begin to caramelize (approximately 20-30 minutes).
- As onions are cooking, add strawberries and 2 tbps of water to a small saucepan. Heat on medium high heat until mixture begins to bubble and strawberries begin to soften (about 7-10 minutes). Remove from heat and stir in balsamic vinegar. Set aside.
- Once onions have cooked, place ⅓rd of the onions on the bottom of an oven proof skillet. Add ⅓rd of the strawberry compote and top with ½ of the brie wheel. Add another onion strawberry layer and add the second half of brie. Top the brie with any remaining onion straberry mixture. Place skillet in oven and bake for 5-7 minutes or until brie begins to soften.
- Serve warm.
Notes
- I used a 6oz Triple Creme Goat Brie but any brie will work. If you use a larger 20 oz wheel of brie, make sure that you triple the remaining ingredients.
