Last week, I had a million different bar recipes floating through my head. Since I couldn't decide which idea to start with, I asked Mr. Grumbles and he declared that a cappuccino swirl bar sounded delish!
I'm not too sure why, but chocolate and coffee just seem to go hand in hand. The sweetness of the chocolate combined with the mild bitterness of coffee, seem to go together just like peanut butter and honey.
These bars can easily be served as a dessert but they also make a great breakfast. I think that is the reason I love making bars so much. Breakfast, snack, or as desserts, bars are perfect for almost any meal.
We enjoyed these bars for breakfast since they are not too sweet and pair really well with a fresh cup of coffee.
They were ridiculously easy to make and only required a few ingredients yet the outcome screams sophistication!
The Execution
First, a crust is formed using almond flour, butter, stevia, cocoa powder, egg whites and of course, espresso powder.
As this bakes, cream cheese, stevia and heavy cream are combined until stiff peaks form. The mixture is divided and cocoa powder and espresso powder are added to part of the cream.
Finally, after the crust has cooled, dollops of both white and brown are placed on to the crust to produce two beautiful layers.
That is it! So easy and absolutely delicious, this is "must try" for anyone who loves coffee.

Mochaccino Swirl Bars (Keto)
These are perfect for either breakfast or dessert. Heavy cream, almond flour, cream cheese and espresso powder come together to form this sophisticated bar. Easy to make and not too sweet.

Ingredients
Crust
- 2 cups almond flour
- ½ cup butter, melted
- ½ cup stevia (or other sweetener of choice)
- ⅛ cup cocoa powder, unsweetened
- 1 tbsp instant espresso granules
- ¼ cup liquid egg whites
Filling
- 21 oz cream cheese
- 1 ⅓ cup stevia (or other sweetener of choice)
- 1 cup heavy cream, divided
- 2 tbsp instant espresso granules
- 1 tbsp cocoa powder, unsweetened
Instructions
For the crust:
- Preheat oven to 325. Line a 9 x 9 (or 8 x 8) square pan with parchment paper.
- In a medium bowl, combine crust ingredients and mix well. Press mixture into the bottom of the baking pan and place in oven for 10-15 minutes or until just starting to brown. Remove from oven and let cool completely.
For the filling:
- In a large mixing bowl, beat sweetener and cream cheese on high for 3 minutes.
- Reduce speed to low and slowly add ¾ cup of heavy cream to the cream cheese mixture.
- Once incorporated, increase speed to high and beat until stiff peaks form (approximately 2 minutes). Take half of the mixture and drop large spoonfuls over cooled crust.
- Place remanining ¼ cup of heavy cream in a bowl and microwave for 20-30 seconds or until hot but not boiling. Stir in cocoa powder and espresso powder and stir until blended. Place in freezer to cool, approximately 10 minutes.
- Once cooled, add heavy cream mixture to remaining cream cheese mixture and beat on medium high until thickened (approximately 1 minute)
- Dollop chococolate espresso mixture over crust. Using a spoon, swirl mixtures together.
- Place in fridge to set for at least 4 hours or overnight.
Notes
- This recipe can easily be made ahead of time and is best served the next day.
- I use "Arla" cream cheese which has no added artificial ingredients. It comes in 7 oz instead of 8 oz so the amount of cream cheese in this recipe is from 3 packages. Feel free to use 3-8oz packages (24 oz instead of 21 oz) and adjust sweetness to your taste.
- These bars are not overly sweet so feel free to increase the sweetener if you prefer a sweeter bar.
- These bars must be stored in the refrigerator.
