This recipe was inspired by a patient of mine who will be referred to a K.D :-). When I asked if she had plans for the weekend she stated that she was going to a friends house for appetizers and cocktails. I asked her what she planned on bringing and she stated that the invite specifically stated "NO DIPS".
It turns out that this person hosting the party was not a "dip hater" but assumed that everyone would naturally bring dips...and she was right! K.D. spoke to several of her friends to find out what they were intending on bringing and one stated "Guacamole" and the other one proclaimed "Spinach Dip". K.D. and I both started to laugh as it turns out that even if you are told not to bring a dip, most people will bring a dip anyway!
I made the suggestion of making my Stuffed Meatball Appetizers and like a good "patient", she did exactly as I asked! She also stated that she had seen a recipe whereby you weave bacon around Brussels Sprouts on a skewer.
Now that sounded good!
Fast forward a couple of weeks and I found myself with some bacon that needed to be used up. Since I am a planner, I knew I had a couple of bags of frozen Brussels sprouts and pearl onions from Trader Joe's. Remembering the conversation with K.D., I decided to try making the skewers with the ingredients on hand...and boy am I glad I did!
The Execution
These skewers could not be any easier. Simply grab a bag of frozen Brussel's Sprouts and pearl onions and let them thaw for about 2 hours. Next, take your skewers and cut them in half. I had Mr. Grumbles do it as my kitchen scissors could not to the trick. Make sure that the cut end of the skewer does not have any sharp splinters. Soak the skewers as you wait for the vegetables to thaw out.
When the vegetables are nearly thawed out, thread them in an alternating pattern the length of the skewer. Next, take 1 piece of bacon and pierce the skewer and wrap it tightly around the vegetables and attach it to the other end. Finally, bake it in the oven until the bacon crisps.
THAT'S IT!
These skewers could be served as an appetizer or serve them along side these recipes:
