I have a secret. The first time I made this tart the outer edges of the crust got burnt.
PLEASE don't let that secret stop you from making one of my new all-time favourite desserts.
The burnt crust was simply a lack of paying attention to detail and NOT a fault in the recipe.
You see, as I was placing this dessert into the oven, Mr. Grumbles came into the room and asked me a question. As I turned my head to answer, my body shifted and I ended up slightly leaning the pie to one side. Freaking out since some of the liquid started to spill, I over-corrected and ended up getting some of the pie filling on the other side of the crust.
What does this have to do with my slightly charred crust?
Well, for those of you who don't know, sugar burns very easily. So, my par-baked crust that was already slightly brown got a nice dose of sugar so when I placed it in the oven to bake, the crust burnt.
However, even with a slightly burnt crust, this tart is BY FAR one of my favourite recipes.
With that being said, I decided to redo the same pie but I used a regular pie crust instead since Mr. Grumbles always prefers food that contains gluten!

And here it is with a store-bought crust.
Regardless of whichever way you make it, this sweet and creamy apple tart is absolutely delicious!
How to Make a Creamy Apple Tart
Step 1:
Prepare your crust. I made my Tart Crust recipe and added a little flax and cinnamon to the mix to give it an extra little cinnamon crunch.
This was placed in the oven and baked for about 10-15 minutes or until the edges just begin to brown.
If you decide to buy a crust, follow the directions for "par-bake" meaning you are only going to slightly brown the crust as the crust will be baked again once the toppings have been added.
Step 2:
While crust is baking, take a medium-size mixing bowl and add the heavy cream, greek yogurt, egg, sugar, vanilla and salt. Beat on medium speed for about 1 minute. Set the mixture to the side.
Step 3:
Once the crust has baked and had started to brown slightly, add the cream mixture to the top of the crust. Return the apple custard tart to the oven for an additional 30 minutes. The second time I baked my crust, I used a flexible pie crust protector to help to make sure the crust did not burn.
Step 4:
Once the cream has set, remove the tart from the oven and carefully lay the apple slices over the tart. Brush butter all over the apples and sprinkle apples with a little cinnamon and brown sugar.
Return the tart to the oven and bake an additional 10 minutes or until the apples begin to brown.
Substitutions
Tart Pan: Feel free to make this in a pie pan or any other dish. Just be aware that you may need to adjust the baking time to suit the change in pan size.
Almond Flour Tart Crust : use your favourite crust recipe or buy a pre-made crust. If using a premade crust, make sure to follow the "par-bake" directions.
Greek Yogurt: replace with equal parts sour cream.
Heavy cream: replace with sour cream or more greek yogurt.
In order not to burn the crust, make sure not to get any of the creamy fillings on the tart.

This delicious tart is a simple combination of apples, greek yogurt and heavy cream. Easy to make and healthy to eat, this keto and gluten-free Apple Custard Tart can be enjoyed without any guilt!

Ingredients
For the Crust:
- 200 grams (1.5 cups) almond flour
- 115g (1 stick) butter, softened
- ½ cup sugar (I use Lakanto for a sugar-free version)
- 1 tbsp flaxmeal
- 1 tsp cinnamon
- ¼ tsp salt
For the Custard:
- 150 ml heavy cream
- 350 g 0% fat plain greek yogurt (I use Siggi's Skyr)
- 1 egg
- ½ cup sugar (I use Lakanto)
- 1 tsp vanilla
- ¼ tsp salt
For the Apple topping:
- 1 apple, thinly sliced
- 1 tbsp brown sugar (I use Lakanto Golden)
- 1 tbsp butter, melted
Instructions
- Preheat the oven to 350 degrees F. Generously grease a tart pan and set aside.
- Combine all the crust ingredients and place in the fridge to cool. Once cooled, press crust into tart pan and place in the oven for 10 minutes.
- While the crust is baking, beat all the custard ingredients. Once crust has cooked, remove from oven and pour custard over crust. You may have too much custard mixture and if so, place custard in a small greased baking dish. Place tart (and any additional leftovers) in the oven for 30 minutes.
- Once the tart has cooked, remove from the oven and let cool for 5-10 minutes. Once tart has cooled, arrange apple slices over tart. Brush apple slices with melted butter and sprinkle with brown sugar. Return the tart to the oven for an additional 10-15 minutes or until apples begin to turn brown.
- Remove from the oven and let cool completely before cutting.

OMG!!! Thank you so much for catching the word "sugar". I always use sugar substitutes (such as Lakanto and Whole Earth) and forgot to go back in and add the links before I published it. The apple layer is VERY thin and when I put the ingredients into My Fitness Pal it comes out to over 80% fat which by definition is "keto". However, with my BIG mistake of not adding my links to reflect the sugar substitute, this recipe was DEFINITELY not keto with regular sugar.
