This delicious tart is a simple combination of apples, greek yogurt and heavy cream.  Easy to make and healthy to eat, this keto and gluten-free Apple Custard Tart can be enjoyed without any guilt!

Ingredients

Units Scale

For the Crust:

  • 200 grams (1.5 cups) almond flour
  • 115g (1 stick) butter, softened
  • 1/2 cup sugar (I use Lakanto for a sugar-free version)
  • 1 tbsp flaxmeal
  • 1 tsp cinnamon
  • 1/4 tsp salt

For the Custard:

  • 150 ml heavy cream
  • 350 g 0% fat plain greek yogurt (I use Siggi's Skyr)
  • 1 egg
  • 1/2 cup sugar (I use Lakanto)
  • 1 tsp vanilla
  • 1/4 tsp salt

For the Apple topping:

  • 1 apple, thinly sliced
  • 1 tbsp brown sugar (I use Lakanto Golden)
  • 1 tbsp butter, melted

Instructions

  1. Preheat the oven to 350 degrees F.  Generously grease a tart pan and set aside.
  2. Combine all the crust ingredients and place in the fridge to cool.  Once cooled, press crust into tart pan and place in the oven for 10 minutes.  
  3. While the crust is baking, beat all the custard ingredients.  Once crust has cooked, remove from oven and pour custard over crust.  You may have too much custard mixture and if so, place custard in a small greased baking dish.  Place tart (and any additional leftovers) in the oven for 30 minutes.
  4. Once the tart has cooked, remove from the oven and let cool for 5-10 minutes.  Once tart has cooled, arrange apple slices over tart.  Brush apple slices with melted butter and sprinkle with brown sugar.  Return the tart to the oven for an additional 10-15 minutes or until apples begin to turn brown.
  5. Remove from the oven and let cool completely before cutting.
