Have you ever had crepes before? If the idea of making crepes is intimidating, I highly encourage you to continue reading this post to overcome your fear.
Growing up in the province of Quebec, crepes were something we ate frequently. The versatility of this recipe is endless.
Simply adding different spices can really make this recipe into anything, whether it be breakfast, lunch, dinner or dessert.
Here are some different crepe ideas:
- Add cinnamon and sugar to the batter and fill it with cream cheese and you have an amazing dessert.
- Add sugar and cocoa powder to the batter to make chocolate crepes which you could fill with ice cream.
- Add Italian spices and fill the crepes like manicotti and bake it in the oven for a delicious dinner.
- Add Mexican spices, fill it with chicken and pour enchilada sauce over the top for a quick Mexican casserole.
As I keep growing this blog, each of these ideas will be posted as official recipes but as for now, let's get on to making the basic crepe recipe.
First, combine the almond flour, eggs and coconut cream in a blender. Blend on high for approximately 30 seconds. If you don't have a blender
, combine all the ingredients and whisk by hand. Let the mixture sit as you heat the crepe pan. If you don't have a crepe pan
, any skillet will do. Pick the size of the skillet depending on the size you want your crepes. I tend to make desert crepes smaller than the crepes I will serve as a main meal.
Heat your skillet on medium-high heat and spray well with oil.
Take a ¼ measuring cup and fill with it with the crepe batter. Lift the pan off the heat and slowly pour the crepe batter into the hot pan as you gently roll the skillet to help spread the batter evenly. Place the skillet back on the stove. Once you see tiny bubbles forming throughout the crepe, it is ready to be flipped.
Using a spatula, quickly flip the crepe and cook for approximately 30 more seconds.
Place cooked crepe on a plate and repeat until all the batter has been used.
This recipe will make 8-12 crepes depending on size and thickness

5 Minute Whole30 Crepes (Keto, Low Carb, GF)
Whole30, low carb, gluten free crepes can be filled with a variety of foods to create endless possibilities.
- Total Time: 11 minutes
- Yield: 8-10 crepes 1x
Ingredients
- 5.4 fl oz coconut cream
- 35 g (4 tbsp) almond flour, groud
- 6 eggs
Instructions
- Combine all ingredients in a <a href="http://Vitamix E310 Explorian Blender, Professional-Grade, 48 oz. Container, Black
" target="_blank" rel="false noopener" data-wplink-url-error="true">blender or mixing bowl and combine well
- Heat a skillet over medium-high heat
- Pour batter into a ¼ measuring cup. Lift skillet off heat and slowly pour batter into skillet while gently turning skillet to fully cover base of skillet
- Once bubbles form throughout crepe (about 1-2 minutes depending on thickness), flip crepe and continue to cook for approximately 30 seconds.
- Remove crepe from heat and place on a plate. Repeat with remaining batter.
Notes
- Make sure skillet is well greased. You may need to add more cooking spray or oil if crepe begins to stick
- Add different spices depending on what you will be using crepe for.
