And, this caramel sauce is so easy to make so PLEASE don't be intimidated by making homemade sugar-free caramel sauce.
Trust me...I lick of a spoon of this salted caramel sauce and you will become addicted just like the rest of us!
What ingredients do I need to make this Keto 5-Minute Salted Caramel Sauce?
- butter, unsalted
- sweetener
- heavy cream
- vanilla
- salt
What type of sweetener do you have to use?
This recipe calls for BochaSweet.
BochaSweet comes from a Kaboocha squash and does not crystalize as it cools so it is the perfect choice for this recipe.
Can I use any other types of sugar substitutes?
You can replace the BochaSweet with Allulose but you may need to add more Allulose as it is only ⅔rds as sweet as regular sugar.
If you don't care about the caramel crystalizing as it cools, you can use any type of erythritol based sweetener. When you want to use your caramel, simply heat it up slightly and stir it to dissolve the crystals.
IF you want a deeper golden caramel colour, you can always add some Yacon Syrup.
How to Make Sugar-Free 5-Minute Salted Caramel Sauce
- Melt the butter in a large saucepan
- Add in the butter and stir to combine
- Let it boil for about 5 minutes
- Remove it from heat and add in the heavy cream SLOWLY as it will bubble vigorously
- Finally, add in the salt and a splash of vanilla
What if I want a thicker caramel?
IF you want a thicker caramel, simply return the pot to the stovetop after adding the heavy cream and boil for an additional 10-15 minutes
Why do you make such a large batch of Caramel Sauce?
This recipe does make about 2 cups of sugar-free salted caramel. I make a large batch since the amount of time to make 1 cup vs. 2 cup is the exact same.
I then take the 2 cups and divide it into smaller portions which I can freeze. This way, I always have some caramel sauce ready for whenever I want it.
If you don't want to make as much, you can simply divide the recipe in half.
No Candy Thermometer Salted Caramel
Unlike most caramel recipes, this salted caramel doesn’t require a candy thermometer. That's what makes it SO EASY!
And don't worry if you think it is too liquid in nature. This Salted Caramel Sauce will thicken as it cools.
How should you store this 5-Minute Salted Caramel Sauce?
- After the caramel cools down, pour it into a glass jar or container.
- Refrigerate for up to 1 month.
- The caramel solidifies as it cools, but you can reheat in the microwave or on the stove so it’s liquid again.
- You can freeze the salted caramel in an airtight container for up to 3 months. Thaw in the refrigerator or at room temperature, then warm up before using.

Ingredients
- 8 oz (1 cup) butter
- 1 cup Bocha Sweet
- 1 cup heavy cream
- ½ tsp salt
- 1 tsp vanilla
Instructions
- Melt the butter in a large saucepan. Add in the sweetener and bring to a boil. Boil for 5 minutes and remove from heat. Carefully, in small batches, add in the heavy cream, whisking after each addition.
- Stir in the vanilla and salt. Allow it to come to room temperature before placing it in the fridge
For a Thicker Caramel:
- Follow the above Step 1 directions and after adding heavy cream, return the saucepan to the stovetop and continue to boil for an additional 10 minutes.
- Stir in vanilla and salt and allow to cool
Notes
- the caramel will firm as it cools
- if you use other type of sweeteners the taste will be the same but it sill crystalize as it cools. Simply heat the caramel up and stir it to dissolve the crystalize sugar before using.
