There has got to be over a billion chili recipes. There are gluten-free, vegetarian, pumpkin, vegan, keto...I could go on forever but you get the point. I love chili and I wanted to come up with a recipe that was all my own, easy to make and Whole30 approved. This Whole30 Chili with a Twist definitely hit the bill!
A good friend of mine makes the most INCREDIBLE chili. I'm not kidding...I am pretty sure it could be award-winning. With that being said, I thought I would pick her brains to come up with delicious chili. She kindly shared her recipe with me and as I read through the ingredients and steps involved, I realized there was not a chance that this was going to be something I would make. Her wonderful recipe would take over half a day just trying to gather the list of ingredients and then another day making the chili! (o.k....slight exaggeration but you get what I mean!)
Although her chili is to die for, I decided to opt for a simpler version. I knew I had to start with the fundamental ingredients, otherwise, I wouldn't be able to call it chili! I opened the pantry, pulled out my supplies and got to work. Within 30 minutes, I had a satisfying and unique chili that I could call my own!
How do you make this Whole30 Chili with a Twist
- Starting with my slow cooker
on the saute mode, I added the ground beef.
- As the beef started to brown, I chopped 2 small onions.
- Once the beef was barely pink, I added the onions and some garlic and stirred it until the onion started to become translucent.
- Next, I added crushed tomatoes, coconut aminos, riced cauliflower ( here is a link to make your own if store bought is not readily available) some spices and continue to let the chili simmer for another 10 minutes.
- If you don't have this type of slow cooker
, you could always use your stove top and use a large pot instead.
Blah, blah, blah, right? I mean, this does not sound like anything to write home about, does it? Where is the uniqueness? Where is the creativity? What makes this chili any different?
The surprise was what was lurking in my fridge...Olives!
- I took some olives and some of the olive juice and added it at the end to my chili. OMG! This addition made all the difference!
In under 30 minutes, I had a unique and creative Whole30 Chili with a Twist that required no crazy, hard to come by ingredients.
Is it as good as my friend Sally's?
I still think hers is better but for a quick chili, this is definitely a contender!

Whole30 Chili with a Twist (Low Carb)
This Whole30 chili comes together in minutes without any special ingredients. Within 30 minutes, you can have a delicious, low carb, keto and Whole30 approved chili.
- Total Time: 35 minutes
- Yield: 4-6 bowls 1x
Ingredients
- 1 lb ground meat (turkey, beef or pork)
- 750 g 0r 26 oz tomatoes, crushed and strained (I use Pomi)
- 12 oz riced cauliflower (I use frozen organic riced cauliflower from Trader Joe's)
- 90 g or 3 oz of sliced olives (I use Lindsay's Natural Olives)
- 7 oz olive juice
- 2 small onions (6 oz or 170g), chopped
- 2 tbsp coconut aminos (or soy sauce if not doing Whole30)
- 1 tbsp minced garlic
- 1 tbsp Frank's hot sauce
- 2 tsp cinnamon
- 2 tsp coriander
- 2 tsp cumin
- salt and pepper to taste
Instructions
- In a large pot or using your crock pot on the saute mode, add meat and cook until no longer pink. Add in chopped onion and garlic. Stir and continue to cook about 3-5 minutes or until onions start to become translucent.
- Add in crushed tomatoes, coconut aminos, riced cauliflower, olive juice and spices. Stir to combine and simmer for an additional 20 minutes.
- Add sliced olives, stir and divide into 6 bowls. Add salt and pepper to taste.
Notes
- Feel free to omit the riced cauliflower or make your one following these directions)
- I like my chili spicy so I add some extra hot sauce to my bowl!

Have you tried making it with half ground beef and the other half with TVP!
