Broccoli surrounded with a deliciously cheesy filling and topped with a crunchy cheese topping, what is there not to love! Plus, add in the fact that it is ridiculously easy to make, and you end up with what I term to be "The BEST"!

Plus, it doesn't hurt that this broccoli cheese recipe is also loaded with such a healthy vegetable. Low carb, gluten-free, keto and healthy...what more could one want.
Not only delicious, but this broccoli cheese casserole pairs well any just about any and all main dishes.
It's also perfect for a potluck dinner, as leftovers for lunch or as a side dish at your next Thanksgiving or Christmas holiday meal.

What ingredients do you need to make this Easy Keto Broccoli Cheese Casserole?
- broccoli
- sour cream
- mayo
- cream cheese
- cheddar cheese
- butter
- pork rinds
- poultry seasoning, garlic, salt and pepper

What type of broccoli can you use to make this low carb Broccoli Cheese Casserole?
The great thing about this dish is that you can use frozen broccoli or fresh broccoli.
I always have a bag of frozen broccoli in my freezer which helps to make this side dish quick AND easy. To thaw the broccoli, simply remove the bag of frozen broccoli from the freezer in the morning and set it in a bowl on the counter. By the time dinner rolls around, the broccoli is no longer frozen.
Mr. Grumbles doesn't love large chunks of broccoli so if you have a similar family member, simply chop the broccoli into smaller pieces.

Do you need to cook or blanch the broccoli first?
Absolutely not! You can just mix the thawed broccoli into the rest of the ingredients.
I prefer to do this as I like my broccoli to have a slight crunch when it comes out of the oven. If you prefer to have a slightly softer broccoli texture, follow the directions on the bag to cook your broccoli first.
If you are using fresh broccoli and want to cook it quickly, you can stick it in a microwaveable bowl with about ¼ cup of water. Heat it on high for about 5 minutes.

What if I don't have any pork rinds?
You can still make this casserole and not add the pork rinds.
The pork rinds add a nice crunch but do not add that much additional flavour so I am sure (although I have not made it without the pork rinds) that it will taste just as good.

Can you make this deliciously easy Keto Broccoli Cheese Casserole dish ahead of time?
You sure can!
You can easily make this dish up to 24 hours ahead of time. Then all you have to do is pop it in the oven on the big day.
If you do decide to make it ahead of time just don't add the pork rind topping. Assemble the dish, cover and refrigerate the casserole for up to 24 hours.
When you are ready to bake it, add the topping and bake as directed.
You may need to add 10-15 minutes to the total baking time if it is cold right out of the fridge.
How do you make this 5-Minute Broccoli Cheese Casserole?
- Preheat the oven to 350 degrees F.
- Combine the sour cream, mayonnaise, cream cheese, poultry seasoning, garlic powder, salt, pepper, and one cup of the grated cheese in a large bowl.
- Mix until fully combined and then stir in the broccoli
- Place the pork rinds in a food processor and process.
- Add the melted butter and pulse a few times to combine (you can also manually crush the pork rinds with your hands and mix with the melted butter)
- Spray a 9 x 9 baking dish well with cooking spray and spread the broccoli mixture into the dish
- Top with the pork rind mixture and sprinkle with the remaining cheese
- Bake the casserole uncovered for 30-35 minutes or until it is bubbly, and the crust is lightly browned
- Let sit for about 5 minutes and serve hot.

Tips, Tricks and Substitutions:
- If you don’t have any pork rinds, you can omit them completely or use any low carb panko crumbs. If you aren't looking to make this dish gluten-free, you can crush croutons or Ritz crackers instead.
- You can substitute the cream cheese with a cream of chicken, cream of mushroom or cream of celery soup but be aware that these soups contain more carbs than cream cheese and may also contain gluten.
- I don’t usually blanch my broccoli first, because I like it crisp. However, if you prefer it a little softer, feel free to cook it first
- If you do prefer soft broccoli, you might also want to leave it in the oven for an additional five minutes or until it is a consistency you like.
- If you don’t have cheddar or want to change things up a bit, you can substitute Gruyere, Fontina, Havarti, a Mexican blend, or an Italian blend of cheeses.

Ingredients
- 14 oz broccoli, frozen or fresh
- ½ cup sour cream
- ½ cup mayo
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese, divided
- 1 tbsp poultry seasoning
- 1 tsp garlic powder
- ¼-½ teaspoon salt
- ¼ tsp black pepper
- ½ cup crushed pork rinds
- ¼ cup butter, unsalted, melted
Instructions

Preheat the oven to 350 degrees.

Combine the sour cream, mayonnaise, poultry seasoning, garlic powder, salt, pepper, and one cup of the grated cheese in a large bowl. Add the broccoli and mix well.

Place the pork rinds in a food processor. Add the melted butter and pulse a few times to combine.

Spray a 9 x 9 or 8 x 8 baking dish with a non-stick cooking spray and add the broccoli mixture and spread out. Sprinkle the rest of the cheese and pork rind crumbs evenly over the top.

Bake the casserole uncovered for 30-35 minutes or until it is bubbly and the pork rind crust is lightly browned. Let sit for about 5 minutes and serve.
Notes
- I prefer only ¼ teaspoon of salt but Mr. Grumble's prefers ½ teaspoon so feel free to add either depending on how salty you like your food
- you can also turn the oven to "Broil - Hi" to get the topping to brown
