
This One Dish Skillet Chicken Spinach Artichoke is the perfect weeknight dinner. With only a handful of ingredients, 20 minutes of time and only 1 dish to clean, this low carb and healthy easy dinner is created!
I have recently been craving all things "appetizer-ish".
Since the beginning of the year, the lack of "allowable" social gatherings has put a damper on me creating anything that even remotely sounds like hors d'oeuvres.
I mean, let's face it, appetizers are meant to be shared. They are for gatherings and get together with all the ones you love. And since that has not happened this year, nor have I eaten a single dip, chip or other "snacky" thing.
So, craving appetizers but needing a real meal for Mr. Grumbles and me, I came up with a simple, one-dish skillet chicken that tastes just like my delicious Chicken Spinach Artichoke Dip, but can be eaten as a main meal!

- olive oil, salt and pepper

What is Alouette Artichoke Cheese Spread?
Alouette cheese spread is a soft cheese spread.
The Alouette story begins in the early ‘70s when the renowned French cheesemaker Jean-Noel Bongrain decided it was time to bring his passion and skill for French specialty cheese to the States.
Choosing the rolling hills of Lancaster, Pennsylvania as his new American home, the company embarked on creating a new line of original, specialty cheeses – one that would combine traditional French recipes with flavours suited to the US.
In 1974, Alouette Spreadable Cheese was born.
Thanks to its soft, velvety texture and unique blend of fresh flavours – two features that would come to define the brand – it was an instant success.

Where can you buy Alouette Spinach Artichoke Spread?
I have seen this spread in EVERY grocery store. It is usually located near the specialty cheeses and comes in a round container.
If you can't find it, you can use Boursin or any other flavoured cream cheese spread.

Do I have to use chicken breast meat?
You can use chicken thigh meat instead of chicken breast meat. Regardless of what type of chicken you use, make sure it is skinless and boneless.
Also, since we are slicing the chicken in half to make thinner sections, try to use chicken that is somewhat equal in size so that it will cook evenly.

Can I use frozen spinach instead of fresh spinach?
Absolutely!
Just make sure that you thaw the spinach and squeeze ALL the excess water from the spinach. If you don't you will end with a very watered down tasting sauce.
How do you make this Skillet Chicken Spinach Artichoke weeknight dinner?
- Preheat the oven to 400 degrees F.
- Take each piece of chicken and slice each chicken breast in half, lengthwise to create thinner chicken breasts
- Add some oil to an oven-proof skillet
- Pan-fry each chicken breast, about 2-3 minutes per side

- While the chicken is cooking, mix together the Allouette, cheese, diced artichokes and chopped spinach
- Spread the mixture over the chicken
- Add additional cheese, if desired
- Bake the chicken in the oven until the cheese begins to bubble.

What Should I Serve with This?

Can I make this Skillet Chicken Spinach Artichoke Lighter?
If you are looking to make it a little lighter try to look for a lighter cream cheese spread. Also, you can reduce the amount of cheese used in this recipe by half.

Can this make this Skillet Chicken Spinach Artichoke Ahead or time?
You can make this dish a day in advance.
Place it in the fridge and when you are ready to bake it, place it in the oven for about 10 minutes at 350 degrees F.

Ingredients
- 2 chicken boneless skinless chicken breasts
- 1 tbsp olive oil
- 1 cup artichokes from a jar
- 6.5 oz Spinach & Artichoke Soft Spread (I used Alouette)
- 4 cups chopped fresh spinach
- ½ cup shredded Mozzarella
- ½ cup shredded Parmesan
- salt and pepper
Instructions
- Preheat the oven to 400 degrees F.
- Take each piece of chicken and slice each chicken breast in half, lengthwise to create thinner chicken breasts. Sprinkle all sides of the chicken with salt and pepper.
- Add the oil to an oven-proof skillet. Pan-fry each chicken breast, about 2-3 minutes per side or until they just begin to brown.
- While the chicken is cooking, mix together the Allouette, cheese, diced artichokes and chopped spinach
- Spread the mixture over the chicken and add additional cheese, if desired
- Bake the chicken in the oven for about 15 minutes or until the thickest part of the chicken breast registers 165 degrees F. Turn on the broiler and broil the dish until the cheese begins to bubble.
Notes
- be careful when removing the dish as the handle will be hot
- you can always transfer the dish to a separate oven-proof dish - you will just has 2 dishes instead of one!
