These Salted Caramel Apple Cookies are really easy to make and taste just like a caramel apple without all the mess. Simple ingredients such as almonds, apple and a light caramel drizzle make these cookies the perfect fall treat!
The other day, I saw the most BEAUTIFUL and DELICIOUS looking caramel covered apple. Luscious caramel with a light dusting of cinnamon and nuts made we want to take a bite out of my computer screen!
Knowing better than to do so, I decided to try and come up with a salted caramel apple that would be easier to eat yet just as decadent.
And boy do these Salted Caramel Apple Cookies hit the spot!
Shredded apple combined with crushed almonds and finished with an easy caramel drizzle is the perfect "bite-size' version of a caramel apple.
How to Make Salted Caramel Apple Cookies
Step 1:
- Take a small apple and grate it. Add brown sugar and cinnamon to the bowl and gently toss the shredded apple to coat it with the cinnamon-sugar mixture. Set the bowl aside. If you don't care to grate the apple, simply cut it into tiny pieces.
Step 2:
- In a medium mixing bowl, cream the butter with the sugar until light and fluffy. Add in the egg and beat until combined. Add in the chopped almonds and almond flour, salt, baking powder and vanilla. Stir everything together. Finally, add the apple mixture to the cookie batter and stir.
Step 3:
- Drop 1 tablespoon of cookie mixture on to a lined cookie sheet. Gently flatten each cookie with the bottom of a glass. Place the cookies in the oven for 8-10 minutes or until just beginning to brown.
- Remove the cookies from the oven, let them cool 5 minutes and then transfer them to a cooling rack.
Step 4:
- As cookies are cooling, add peanut butter and heavy cream to a bowl and heat for 20 seconds or until the peanut butter is starting to melt. Add a little caramel extract and powdered sugar to the peanut butter and stir until the sugar dissolves. Finally, carefully drizzle caramel over the cookies.

Ingredients
- 3 oz diced apple
- 3 tbsp butter, softened
- ¼ cup brown sugar (I use Lakanto Golden)
- ¼ cup sugar (I use Pyure)
- 1 egg
- ¼ tsp caramel flavouring
- ¾ cup almond flour
- ¼ cup coconut flour
- ¼ cup crushed nuts (I used walnuts)
- 1 tsp vanilla
- 1 tbsp Apple Pie Spice Mix
- ½ tsp salt
- ¼ tsp baking power
For the Caramel Topping:
- 1-2 tablespoon nut putter
- 1 tbsp butter
- 1 tbsp powdered sugar
- ⅛ tsp caramel extract
Instructions
- Preheat oven to 350 degrees F. Line a cookie sheet with parchmement paper
- In a medium mixing bowl, cream the butter with the sugar until fully incoporated. Add in the egg and beat until combined. Add in the almond flour, coconut flour, caramel extract, apple pie spice, salt, baking powder and vanilla. Stir everything together. Finally, add the diced apples and crushed nuts to the cookie batter and stir everything together.
- Drop 1 tablespoon of cookie mixture on to a lined cookie sheet. Gently flatten each cookie with the bottom of a glass or dampen your fingers and gently shape the cookies. Place the cookies in the oven for 8-10 minutes or until just beginning to brown. Remove the cookies from the oven, let them cool 5 minutes and then transfer them to a cooling rack.
- As cookies are cooling, add peanut butter and butter to a bowl and heat for 20 seconds or until it is beginning to melt. Add a little caramel extract and powdered sugar to the peanut butter and stir until sugar dissolves. Finally, carefully drizzle caramel over the cookies.
