High Protein Bread Crumbs
If you look at the recipe card, you are sure to notice that although I am calling these "bread crumbs", there is technically no "bread" involved in this recipe.
By eliminating the actual bread, these low carb homemade Parmesan crumbs instantly become high in protein, keto-friendly as well as gluten-free! Plus, since you only need 2 ingredients, they also end up being easy to make and super cost-effective!
Keto Crumbs Ingredients
To make this high protein bread crumbs, all you need is some Parmesan cheese and seasoning. That's right - Only 2 simple ingredietnts!
This recipe is pretty much my Super Easy Parmesan Cracker Crisps that are crushed into crumb-like texture and used as a replacement for bread crumbs.
Packed with flavour, I highly suggest you make a batch today - you won't regret it when you start topping your casseroles, side dishes and even sprinkling it on top of your favourite salad!
What type of Parmesan to use
You will want to use Parmesan cheese that comes from a block of cheese and not the parmesan that is grated.
Interesting fact: Did you know that Kraft grated Parmesan cheese (the one that you can buy on the shelf at room temperature at the grocery store) actually contains wood pulp?!!! According to the FDA, it is safe to consume wood pulp in small quantities but why we need to add it to food is beyond me!
You can either buy wedges of Parmesan cheese and grate it yourself or you can buy shredded Parmesan cheese and save yourself some time.

Making High Protein Bread Crumbs
To make keto crumbs, all you have to do is scatter the shredded cheese on a baking sheet. To make clean-up a snap, I like to use a piece of parchment paper on the baking sheet.
Next, sprinkle some herbs over top of the cheese and bake it in the oven until it begins to brown. Open the oven door and leave the parmesan in the oven to dry out.
Lastly, to get the crumb texture that we are looking for, break the Parmesan into pieces and pulse it in a food processor until it reaches the desired consistency.
Can I add anything to these Keto Crumbs?
If you are thinking of using these low carb homemade Parmesan crumbs as a coating for chicken or fish, you can always add a little almond flour to the mix.
You can also change the spices and use either an Italian mix or any other spices you wish.
Also, if you want to keep them plain, that works too! This way, you can simply add the seasoning you wish to use depending on the flavour profile you are looking for. For example, add some Old Bay seasoning if you want to use these for a crab cake or fish bite binder. For Easy PSMF Enchilada Meatballs add some Mexican seasoning.

How to Make Low Carb Homemade Parmesan Crumbs - High Protein, Keto

- Total Time: 12 minutes

Ingredients
- 3 cups shredded Parmesan cheese
- Optional - 1 tablespoon seasoning of choice (I used Italian)
Instructions
- Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper
- Spread the cheese evenly over the parchment paper. Sprinkle with seasoning if using.
- Bake in the oven for 8-10 minutes or until the cheese begins to brown. Turn off the oven and open the oven door a crack. Allow the cheese to cool for 30 minutes.
- Remove the cheese from the oven and continue to allow it to fully cool. Once cooled, break down the cheese into sections and place them in a food processor. Process until desired consistency is reached.
- Store any leftovers in the fridge or freezer.

Well now why did I never think of this!??! Great idea, so easy and adds so much flavor. I use a lot of sprinkle Parmesan cheese and this is so much better and flavorful I will definitely be making this often.
