I don't think I have ever heard of anyone who does not like the beginning of the fall season. Packed with beautiful leaves changing colours every day, fires roaring in the fireplace and plans starting to form for the upcoming holiday season, it is definitely a season filled with anticipation.
It is also a time when EVERYONE starts to crave all things cinnamon! Recipes like this Easy Keto Cinnamon Bundt Cake, this Quick and Easy Cinnamon Keto Eggless Snacking Cake or this Easy One-Bowl Keto Pumpkin Bread are on constant rotation at my house.
Wanting to create more cinnamon-based keto bar recipes, I decided to see if I could create my favourite flavour profile of an apple fritter and turn it into an easy keto bar recipe.
Successful??? Yes, I was!
Easy Keto Apple Bar that tastes like a Fritter
I think you will be pleasantly surprised at how similar these keto apple bars are to tasting like an apple fritter.
Now don't get me wrong - they do not have the fried dough-like consistency of a doughnut, but in terms of taste, they are pretty darn close!
Soft and gooey in texture (just like an apple fritter!), bursting with apple flavour (just like a fritter!) and only 10 minutes of hands-on time (NOT like a fritter!), I think you will agree how great these sugar-free apple bars taste!

Ingredients for Keto Apple Fritter Bars
Here is a list of ingredients and any substitutions you will need when making this fall keto bar recipe:
- Apple - You will need 80 grams of apple, diced. Use Granny Smith, Honeycrisp or MacIntosh and feel free to peel the apple or leave it unpeeled. Do NOT be tempted to use more than 80 grams. In the pictures, I used 115 grams, and it was too much apple to batter ratio so the bars did not hold together as well as they should.
- Sweetener - Brown sugar substitute, such as Truvia Brown Complete, gives this fall keto cookie recipe a nice rich flavour
- Shortening - This is one keto bar recipe that I prefer to use organic palm shortening since shortening contains less water than butter. Since the apples will release a little moisture, I find that using shortening keeps them from being too moist. However, I have made these using butter, and they still taste just as good! A
- Tahini - This is not one of my usual ingredients, but I have been using it more and more in my keto baked goods and am LOVING how my low-carb desserts are turning out. Tahini is an effective ingredient in baked keto goods primarily due to its high fat content and emulsifying properties, which help to bind ingredients, provide moisture, and add a rich flavour without excess carbohydrates. If you do not have any tahini, use butter or any nut butter.
- Egg - Make sure it is at room temperature
- Almond Flour and Ground Flaxseed meal - Make sure to use ground flaxseed and not actual flax seeds!
- Apple pie spice mix, vanilla, baking powder and salt
For the Sugar-free Apple Bar Glaze:
- Powdered sweetener - Make sure to use powdered sweetener, as it is the only type of sugar substitute that will create the "glaze" that we are looking for
- Heavy Cream - You can also use a little almond milk or water, but you will not see as quickly the same "white" look on the top if you do not use heavy cream
- Pinch of salt

Aren't there too many carbs in an apple to be considered "keto"?
Yes...and no! These keto apple fritter bars contain 80 grams of diced apple.
There are approximately 9 grams of carbs in 80 grams of apple, of which 2 grams are fiber.
Therefore, the net carbs that come from the apple in these sugar-free apple bars is a total of 6 grams. If we divide the dough into 16 bars, it means that adding apple to this recipe adds under 0.4 grams of carbs per bar!
As for the total macros per cookie, according to the ingredients I used, each bar contains 129 calories, 4 grams of carbs, of which 1 gram is fiber, for a total of 3 grams of net carbs per bar!

How to Make this Easy Keto Bar Recipe
Step 1 - Prepare the apples
- Dice the apples into tiny pieces (feel free to leave the peel on the apple or remove it -it is up to you!)
Step 2 - Prepare the batter
- Beat the shortening, tahini and sweetener until light and fluffy - add in the remaining ingredients and beat until just incorporated.
- Fold in the apples

Step 3 - Shape
- Line an 8 x 8-inch baking pan with parchment paper - leave an overhang to make it easier to get the bars out of the pan
- Press the dough firmly in the pan and smooth out the top

Step 3 - Bake
- Preheat the oven to 350 degrees F. and bake the bars for 20-22 minutes or until they begin to brown along the edges - I like my bars to be like a blondie so I pull the bars out once the middle has just set
- Allow bars to cool for 20-30 minutes before adding the glaze
Step 4 - Prepare the glaze
- While the bars cool, combine the powdered sweetener and heavy cream - stir until the sweetener has fully dissolved
- Spoon mixture over the still-warm bars and spread, covering the top of the bars. Allow the bars to cool before using the parchment sling to remove the bars from the pan.

How to Store these Keto Apple Bars
Since these bars contain apple, I will leave them on the counter for only a day or two, and then I like to store them in the fridge. You can easily store these bars in the freezer as well and let them come to room temperature before consuming.

Keto Apple Fritter Bars

Ingredients
For the Apples:
- 80 g diced apples (make sure to dice the apple really well)
For the keto dough:
- ¼ cup organic palm shortening
- ¼ cup tahini
- 1 large egg at room temperature
- ½ cup brown sugar substitute (add more or less depending on preference)
- 2 tsp vanilla
- 1 ⅔ cup almond flour
- 1 tbsp flaxseed meal
- 2-3 teaspoon apple pie spice mix (or cinnamon - adjust to taste)
- ½ tsp baking powder
- ½ tsp salt
For the Sugar-Free Glaze
- ¼ cup powdered sweetener
- ¼ tsp vanilla
- 1-2 teaspoon heavy cream (or water) - depending on desired thickness of glaze
Instructions
- Preheat the oven to 350 degrees F. Line an 8 x 8-inch baking dish with parchment paper, making sure to have an overhang.
- Beat on high speed the shortening, tahini and sweetener for 1-2 minutes. Add the egg and vanilla and beat until incorporated. Add in all remaining ingredients (except for the apples) and beat on high (the dough will be thick like cookie dough).
- Fold in the apples and press the mixture into the pan.
- Place the pan in the oven and bake for 20-22 minutes or until the edges just begin to brown and the center is just set. Remove the pan and allow it to cool for 20-30 minutes.
- While the bars cool, stir together the sugar-free glaze ingredients.
- Once bars have cooled but are still warm, spread the glaze over the bars.
- Allow the bars to cool to room temperature before cutting them into 16 squares.
Notes
- you can use butter instead of shortenint
- you can replace the tahini with any nut butter but you may need to add a little milk if the batter is too thick.
