This cinnamon keto eggless snacking cake is the easiest recipe ever! Simply add some almond flour, whey protein powder, sweetener, water, oil, baking soda, vinegar and salt into a bowl, stir until combined and then pour in a dish and bake! No eggs needed!
A Keto Cake Without Eggs??!!!
I am sure you are well aware of the fact that the price of eggs has gone through the roof! I recently saw a dozen free-range eggs costing over $12 - that's more than a dollar an egg!!!
Most of my keto recipes, such as my Keto Chocolate Cake Recipe, Keto Carrot Cake Roll Cake or this Keto Almond Flour Sponge Cake - Gluten-free require anywhere from 3-5 eggs each - that means that by the time you add in all the remaining ingredients, making sugar-free desserts can be quite expensive these days.
That's why I decided to come up with a keto eggless snacking cake recipe that would be the most economical (as well as one of the best tasting!) keto cakes on the internet!
What Are Keto Snacking Cakes?
The simple title "keto snacking cake" can more or less tell you exactly the type of cake their name implies - they are not fancy enough for birthdays, anniversaries or any other type of gathering or celebration.
They are simply a type of cake that comes together with minimal effort so that when a craving for a keto cake hits, you can whip up this recipe (along with a quick and easy frosting that I have included!) in a matter of minutes.
They are not meant to be complicated, intricate or beautiful to look at, but their taste will rival even the most ornate cake you can create.

High Protein Snacking Cake
Although this recipe is ridiculously easy and almost foolproof, you do have to use very specific ingredients if you want this keto eggless snacking cake to turn out perfectly.
First, this protein cake without eggs requires the use of a pure whey protein powder. This can not be substituted with any other protein powder, such as casein or pea.
Since this is a protein cake without eggs, the addition of ground flaxseed along with water is also a must. Ground flaxseed gives this keto snacking cake the perfectly moist center that we all know and love when it comes to cake!

Lastly, I have only made this recipe using the WholeEarth Baking blend, which contains a mixture of allulose, xanthan gum as well as erythritol. I am not sure is this is a must, but since I haven't tried using other types of sweeteners, I can only tell you that this cake is amazing when you use this sweetener. The only downside to baking with allulose is that the cake will brown faster than other keto sweeteners.

Keto Eggless Snacking Cake Tips
Here are a few tips to ensure you LOVE this recipe as much as I do!
- Place the water and coconut oil in a large glass measuring cup and heat the two together for approximately 30 seconds - this causes the flaxseed to absorb the water at a faster rate
- Make sure you prepare the batter and LET IT SIT for at least 10 minutes to thicken

- Do not forget to add the vinegar at THE VERY END - if you add the vinegar at the beginning, it will react with the baking soda and all the gases will be released before the cake goes into the oven - this will result in a denser cake
- Taste the mixture - since this is a keto cake without any eggs, it is ok to taste the batter and add more sweetener since different protein powders have varying levels of sweetness.
- If adding mix-ins - I suggest only adding them to the top of the cake either RIGHT before placing it in the oven OR allowing the cake to bake for approximately 5 minutes before adding the mix-ins to the top of the cake. The cake batter is very "loose" so heavy items could sink to the bottom if you incorporate them too early.
Protein Cream Cheese Frosting
Although this high protein snacking cake is delicious on its own, I decided to add a high protein cream cheese frosting to complement the cinnamon keto snacking cake.
IF you choose to make this protein cream cheese frosting (you can find the recipe here and replace the palm shortening with cream cheese), it will add 7 grams of protein for a total nutritional value per slice of 160 calories, 13 grams of fat, 1 gram of net carbs and over 10 grams of protein!
Different Keto Snacking Cakes for Different Occasions
This keto cake recipe can be used to make a variety of different styles of cakes. If you double the recipe and use 6-inch cake pans, you can make a 3-tiered keto cake.
You can also use this recipe exactly as written and slice the snacking cake in half and stack to two with some frosting in between to make a delicious bar cake.

Lastly, I have also used this recipe to make 6 cupcakes and added some chocolate protein frosting on each for a healthy birthday treat!

Quick and Easy Keto Eggless Snacking Cake
- Total Time: 25 minutes
- Yield: 16 squares 1x
Ingredients
- 1 cup almond flour
- ¾ cup vanilla whey protein powder
- ⅓ - ½ cup WholeEarth Allulose Baking Blend*
- ¼ cup ground flaxseed
- 1 tsp ground cinnamon
- 1 tsp baking soda
- ½ tsp salt
- 1 cup water
- ¼ cup coconut oil
- 1 tsp vinegar
Instructions
- In a large bowl, add the almond flour, sweetener, whey, ground flaxseed, baking soda and salt. Whisk to incorporate.
- Add the water and coconut oil to a glass measuring cup and place in the microwave for 1 minute. Remove and add the mixture to the bowl with the dry ingredients. Whisk everything together and allow the mixture to sit for 5-10 minutes or until it thickens.
- While mixture is thickening, turn the oven to 350 degrees F. Line and grease an 8 x 8-inch baking dish with cooking spray and parchment paper.
- Once mixture has thickened and oven has come to temperature, add the vinegar to the bowl. Whisk thoroughly. Pour the batter into the baking dish and place in the oven for 18-24 minutes or until a toothpick comes out clean.
- Once cake has baked, remove from oven and allow to cool completely for at least 15 minutes before removing it from the pan and slicing it into 16 squares
