Holidays are coming which means that spending time in the kitchen is a must!
But, with many holiday favourites that are labour intensive, I thought that it was time to create a super simple, yet absolutely delicious recipe for a keto pecan bar that meets keto blondies and came up with these keto White chocolate Pecan Blondies!
You might associate Pecan Pie with Thanksgiving and fall baking. And while that’s true, I have found that these sugar-free blondies are really a fantastic way to enjoy keto pecan bars all year long!

Ingredients
The ingredient list may seem a little long, but they are most likely ingredients that you already have if you have been following my blog. However, if you do not have some of the ingredients, check out the rest of this blog post for substitutions.
- White chocolate - For these keto white chocolate pecan blondies, we are using a combination of melted sugar-free white chocolate along with some white chocolate chips folded into the mix. The melted sugar-free white chocolate ensures that these keto blondies have a really nice white chocolate flavour.
- Coconut oil - I wanted this recipe to be extra dense so I used coconut oil instead of butter.
- Almond milk - To keep these bars super moist, unsweetened almond milk is added to the liquids
- Nut butter - I used natural homemade almond butter but you could use any nut or seed butter. Make sure that you stir your nut or seed butter really well before measuring it.
- Sweetener - I used a combination of white and brown erythritol sweeteners in this recipe.
- Egg - Using 1 whole egg and one egg yolk created the perfect dense texture that we all love when it comes to keto blondies!
- Flour - A combination of almond flour, oat fiber, and psyllium husk powder make the perfect keto high-fiber baking mix to create the gooey texture we are looking for in a sugar-free blondies recipe.
- Homemade Vanilla Extract, Baking powder, and salt - These ingredients help to round out the flavours and give the blondies just a slight "lift".
- Pecans - I used candied pecans since I love the extra crunch. I used my Keto 5-Minute Candied Pecans which only requires butter, sweetener, and pecans.

Instructions
One bowl and about 10 minutes is all it takes to make these Keto White Chocolate Pecan Blondies.

In a large glass bowl, melt together 4 oz keto white chocolate, coconut oil, nut butter, and almond milk. Stir until combined.

Stir in the sweetener followed by the egg, egg yolk, salt, vanilla, and baking soda. Add the flour ingredients and stir until no dry ingredients remain.

Fold in the keto white chocolate chips and the candied pecans

Spread the keto pecan bar mix into a parchment-lined 9 x 9-inch pan and bake at 325 degrees F. for 20-25 minutes.

Allow the bars to cool for 10 minutes before removing them from the pan and slicing them into 16 squares.
Hint: Make sure that the keto blondies batter is not too hot before adding the keto white chocolate as to not melt the chocolate!
Substitutions
These Keto White Chocolate Pecan Blondies have several ingredients that can be substituted and still result in the most amazing keto pecan bars!
- Sweetener - You can use any type of sweetener in this recipe. Just be aware that if you use allulose, the bars will brown more quickly.
- Coconut Oil - Use any type of oil, palm shortening or even butter instead.
- Oat Fiber - Replace the oat fiber or psyllium husk with almond flour.

Variations
Looking for some twists to these Keto White Chocolate Pecan Blondies?
- Dark Chocolate - Add dark chocolate chips instead of sugar-free white chocolate
- Walnuts - Use walnuts instead of pecans or any other type of nut. You could also eliminate the nuts altogether if you want!
- Maple Syrup - replace the almond milk with sugar-free maple syrup

Equipment
This recipe only requires a large bowl, a spoon, and an 8 x 8 or 9 x 9-inch baking dish. I like to use a parchment paper sling to help lift the bars out of the pan to make slicing them much easier.
Storage
These bars can be stored at room temperature for 5 days, in the fridge for 10 days and in the freezer for up to 3 months.
Just make sure that these keto blondies are stored in an airtight container otherwise they will dry out.
Top tip
It is easier to separate an egg yolk from the white when the egg is cold. However, do not try to add cold eggs to the coconut oil. Cold eggs will cause the coconut oil to solidify.

Ingredients
- 4 oz sugar-free white chocolate
- ¼ cup coconut oil
- ¼ cup almond milk
- ¼ cup nut butter (I used almond butter)
- ¼ cup brown sugar substitute
- ¼ cup allulose
- 1 egg + 1 egg yolk
- 1 tbsp vanilla
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup almond flour
- ¼ cup oat fiber
- ¼ cup psyllium husk powder
- ¾ cup chopped pecans, toasted (or candied pecans)
- ¼ cup sugar-free white chocolate chips
Instructions
- Preheat the oven to 325 degrees F. Spray an 8 x 8-inch pan with cooking spray and set to the side.
- In a large bowl, add 4 oz of sugar-free white chocolate, coconut oil, nut butter and almond milk. Microwave on high for 1 minute.
- Add the brown sugar substitute, allulose, vanilla, salt, baking powder egg yolk and egg. Beat until all the ingredients have been incorporated.
- Beat in the almond flour, oat fiber, and psyllium husk.
- Fold in the chopped pecans and ¼ cup sugar-free white chocolate chips.
- Spread the mixture into the baking pan and bake for 20-25 minutes.
- Allow cooling before slicing into 16 squares.

Are these keto pecan bars dairy-free?
They can be! It just depends on what type of sugar-free chocolate you use.
Why do you add psyllium husk?
I have recently been adding psyllium husk (as well as oat fiber and flax seed meal!) since these ingredients are high in fiber and help to keep keto recipes super moist.
Can I use coconut flour instead of almond flour?
Although I have not tried this recipe with coconut flour, I believe you could substitute the two. However, I would use half the amount as coconut flour is VERY absorbent, or add more almond milk to accommodate the substitution.
What type of keto white chocolate did you use?
I used Bake Believe White Melting wafers along with ChocZero white chocolate chips. Most Walmarts carry the Bake Believe brand but you can also buy them online.
Do I have to use Candied Pecans?
You do not have to use candied pecans but if you have 5 minutes to spare, I highly suggest making them as they add an extra level of crunchiness to these keto pecan bars.

thanks for turning me on to the Bake Believe white chocolate melting wafers in another recipe. Taste most like non-keto white chocolate and totally unlike their chips - too bad they can't make their chips taste as good. I like to take a couple of wafers and spread with some peanut butter - like a white chocolate peanut butter cup. Will def make this recipe..
