Keto Apple Fritter Bars

These Keto Apple Fritter Bars have all the delicious flavour of an apple fritter doughnut without all the carbs, calories or time in the kitchen! Soft and gooey like the doughnut and bursting with apple flavour, these sugar-free apple bars are the perfect way to celebrate the beginning of apple season!

Ingredients

For the Apples:

  • 80 g diced apples (make sure to dice the apple really well)

For the keto dough:

  • 1/4 cup organic palm shortening
  • 1/4 cup tahini
  • 1 large egg at room temperature
  • 1/2 cup brown sugar substitute (add more or less depending on preference)
  • 2 tsp vanilla
  • 1 2/3 cup almond flour
  • 1 tbsp flaxseed meal
  • 2-3 tsp apple pie spice mix (or cinnamon - adjust to taste)
  • 1/2 tsp baking powder
  • 1/2 tsp salt

For the Sugar-Free Glaze

  • 1/4 cup powdered sweetener
  • 1/4 tsp vanilla
  • 1-2 tsp heavy cream (or water) - depending on desired thickness of glaze

Instructions

  1. Preheat the oven to 350 degrees F.  Line an 8 x 8-inch baking dish with parchment paper, making sure to have an overhang.
  2. Beat on high speed the shortening, tahini and sweetener for 1-2 minutes.  Add the egg and vanilla and beat until incorporated.  Add in all remaining ingredients (except for the apples) and beat on high (the dough will be thick like cookie dough).
  3. Fold in the apples and press the mixture into the pan.
  4. Place the pan in the oven and bake for 20-22 minutes or until the edges just begin to brown and the center is just set.  Remove the pan and allow it to cool for 20-30 minutes.
  5. While the bars cool, stir together the sugar-free glaze ingredients.  
  6. Once bars have cooled but are still warm, spread the glaze over the bars.
  7. Allow the bars to cool to room temperature before cutting them into 16 squares.

Notes

  • you can use butter instead of shortenint
  • you can replace the tahini with any nut butter but you may need to add a little milk if the batter is too thick.
