Well, then this recipe is for you!
Learning how to make homemade vanilla coffee syrup is seriously as easy as 1-2-3. Then, store the keto vanilla coffee syrup in the fridge for whenever your coffee craving comes a calling.

So, by using the basic idea from my Sugar-Free Simple Syrup in my Southside Gin Cocktail Recipe, I created a quick and easy Homemade Sugar-free Vanilla Coffee Syrup to help you enjoy any number of keto coffee creations!
Keto Vanilla Coffee Syrup Ingredients
You only need 4 basic ingredients to make this homemade sugar-free vanilla coffee syrup!
- Water - Not really an ingredient but makes up the vast majority of this syrup so I thought I should include it!
- Allulose - Allulose, unlike erythritol-based sweeteners, will not crystalize when it cools. If you are only planning on using this keto vanilla coffee syrup in hot beverages, then you should be able to get away with using Lakanto as your sweetener.
- Vanilla - You can use either imitation vanilla extract or homemade vanilla extract. Feel free to add as much or as little as you wish.
- Xantham gum - Xanthan gum is a zero-carb thickener that will help to create the "syrup" consistency we are going for. If you do not have any xantham gum, you can omit this ingredient but you will end up with a more liquid coffee syrup.

How to Make Homemade Sugar-free Vanilla Coffee Syrup
This keto vanilla coffee syrup comes together using just one pot and only takes about 5 minutes of time from start to finish.

Place the allulose and xantham gum in the bottom of a pot. Whisk to incorporate.

Add the water and stir everything together. Bring to a simmer and simmer for about 2-3 minutes.

Remove from heat and stir in the vanilla. Taste the keto vanilla coffee syrup and add additional sweetener, vanilla or a pinch of salt, if desired. Once cooled, store in an airtight container in the fridge.
Hint - Make sure to whisk the allulose and the xanthan gum before adding the water to help ensure that the xanthan gum does not gel together and form clumps.

How can I make different coffee-flavoured syrups?
You can easily buy extracts on line or from LorAnn Oils and create any variety of flavours by simply changing out the vanilla for a different flavour and keeping the rest of the recipe the same. Just be aware that different extract companies have different potencies so you may need less of the extract when compared to vanilla extract.
Do I have to make this sugar-free?
No. If you do not want to make this flavoured coffee syrup recipe sugar-free or keto-friendly, feel free to use regular sugar instead. Just make sure that you simmer the syrup long enough to fully dissolve the sugar.
How do I use this Homemade Sugar-free Coffee Syrup?
You can add this to any type of keto shake, protein shake, hot coffee or even to hot cocoa. This syrup is also delicious to soak cakes with.
How long will this coffee syrup last?
When stored in the fridge in an airtight container, the coffee syrup should last easily up to a month.
How much vanilla extract do I add?
As you can tell from the recipe, the vanilla extract varies from 1-3 tablespoons depending on how "vanilla-forward" you want your syrup as well as how strong your vanilla extract is since each brand (as well the age of your vanilla extract) can create different concentrations of flavours.
Can I make this into a concentrated coffee syrup?
Yes. In order to make this more concentrated, simply reduce the amount of water by half.

- Total Time: 5 minutes
- Yield: 1.5 cups 1x
Ingredients
- 1 cup water
- 1-¼ cup allulose (or a combination of sweeteners)
- 1-3 tablespoon vanilla extract
- ¼ tsp xantham gum
- Optional - 1-2 pinches of salt
Instructions
- Place the allulose and xantham gum in the bottom of a pot. Whisk to incorporate. Add the water and whisk again.
- Heat the saucepan on high heat until it comes to a boil, stirring every so often. Once it boils, turn the heat down to allow the mixture to simmer for 1 minute. Remove from heat and add the vanilla extract and stir until fully incorporated.
- Taste the sugar-free vanilla coffee syrup and add additional sweetener, vanilla or a pinch or two of salt to suit your taste.
- Transfer to a glass jar and allow it to cool before storing it in the fridge.
