One of my favourite things to make are packable lunch bars. Store-bought varieties have so many added chemicals and preservatives that I really try not to buy them. However, with limited time on my hands, making time-consuming bars are not in the cards for me. So if you are like me with limited time, try these quick and easy Whole30 Almond Joy Bars.
So, keeping that in mind and the fact that it is over 90 degrees outside, a "no-bake" easy, limited ingredient recipe is what I wanted to create.
Since Mr. Grumbles' favourite chocolate bar is Almond Joy, I decided to try to make a Whole30 Almond Joy bar.
However, layering chocolate on top of coconut seemed to labor-some for the mood I was in so I thought I would try to create a "deconstructed" version of an Almond Joy Bar.
How to make Deconstructed Whole30 Almond Joy Bars
- In a food processor, combine all the ingredients.
- Turn the food processor on and let it run until the ingredients start to stick together. This took about 4-5 minutes in my food processor.
- Press the bars in a loaf pan that has been lined with parchment paper and place the bars in the fridge to set. Once cooled, slice bars into 12 squares.

Deconstructed Almond Joy Bars
4 ingredients and 5 minutes of time are all it takes to make these coconut almond chocolate joy bars. Whole30 approved!
- Total Time: 5 minutes

Ingredients
- 2 cups unsweetened shredded coconut
- 1 cup raw almonds
- 10 medjool dates (make sure pits have been removed)
- 1 tbsp cacao powder
- salt to taste
Instructions
- Combine all the ingredients in a food processor. Turn food processor on and let run 3-5 minutes or until mixture begins to clump together.
- Press mixture in a parchment lined loaf pan and place in the fridge to cool.

- If you use salted almonds, do not add additional salt
