This Quick 8-Ingredient Whole30 Chili is easy to make and absolutely delicious! Using only 8 simple ingredients and an Instant Pot, in under 40 minutes, you can be sitting down to a healthy, nutritious, Whole30 and Paleo chili dinner.
Not knowing what to cook sometimes is the hardest part of being a food blogger.
So, I decided for once (ok...maybe this was the second time!;-) to ask Mr. Grumbles what he felt like for dinner.
His response?
Chili.
Now, some of you may be wondering what the big deal is about asking for a chili dinner on a Sunday night at 4 pm in the afternoon?
Well, most chilis take a couple of hours to simmer and require very specific ingredients that are usually not found in one's pantry.
What was my response?
"I accept the challenge!"
Although Mr. Grumble looked absolutely confused by my response (I don't think he has made chili once since we have been married and seems to have forgotten how long and how many ingredients chili requires), off he went to trim some trees in our yard (a favourite hobby of his!).
So, did I accomplish my mission?
Absolutely!
By 5 pm, I had a delicious, healthy, Whole30 and Paleo approved chili, waiting to be eaten!
Why do I love this Quick 8-Ingredient Whole30 Chili so much?
- it is very simple
- it only requires a handful of ingredients that most people already have in their pantry
- it was ready in under 1 hour in an instant pot but could easily be done on the stovetop in under 1 hour as well
- it is highly customizable
- it is healthy, Whole30 and Paleo approved
- it is low in carbs as well as calories but is jam-packed with nutrient-rich ingredients
What ingredients make up this Quick 8-Ingredient Whole30 Chili?
- ground turkey (or chicken or beef)
- onion
- broth
- salsa
- roasted red peppers
- peeled tomatoes (I used Cento San Marzano)
- chili powder
- coconut aminos (or honey)
- OPTIONAL - riced cauliflower, unsweetened cocoa powder, beans, cheese, sour cream, guacamole...
How do you make the Chili in an Instant Pot?
- Turn your Ninja Foodie All-In-One (or another type of pressure cooker) on saute "high"
- Spray the inside pot with cooking spray and onions
- Cook until onions begin to brown.
- Add ground turkey and cook until meat is no longer pink.
- Add in salsa, peppers, tomatoes, broth, chili powder and coconut aminos and stir to combine everything
- Add pressure cooker lid and cook on "high" for 25 minutes.
- Manually release the pressure (I use a kitchen towel over the release valve)
How do you cook this Quick 8-Ingredient Whole30 Chili on the stovetop?
- Spray a large pot with cooking spray
- Heat pot on medium-high heat
- Add in diced onions and reduce heat to medium
- Continue to stir onions until they begin to soften
- Add in ground turkey and cook, breaking up any large chunks, until no longer pink
- Add in salsa, peppers, tomatoes, broth, chili powder and coconut aminos and stir to combine everything
- Place the lid on the saucepan and reduce the heat so that chili is just barely simmering
- Cook for 25 minutes
Can I make this Quick 8-Ingredient Whole30 Chili in a Slow Cooker?
Yes! Simply place all the ingredients in a slow cooker and set on high for 3-4 hours or on low for 6-8 hours.
What additional ingredients can I add to this quick chili?
- Add any type of beans (red, black or kidney beans) - FYI - beans are NOT Whole30 or Paleo approved
- Stir in olives for nice twist right before serving. If you add in the olives at the beginning, they will turn to mush so wait until after the chili has cooked to stir them in
- Add some Greek Yogurt to add a creaminess to the chili - FYI - Yogurt is NOT Whole30 or Paleo approved
- Add additional vegetables to increase the number of veggies per serving
- Add riced cauliflower (frozen or fresh) to add some bulk to the dish
- Add additional hot sauce or salt and pepper to taste
- Add a teaspoon of unsweetened cocoa powder to add more depth to the flavours
- Top with cheese, sour cream or sliced avocado

Ingredients
- 1 onion, diced
- 16 oz ground lean turkey
- 16 oz broth
- 16 oz salsa
- 12 oz roasted red peppers
- 28 oz peeled tomatoes (I used Cento San Marzano)
- 1 tbsp chili powser
- 1 tbsp coconut aminos (or honey)
Optional Ingredients
- 15 oz beans (kidney or black beans)
- 6 oz olives
- 1 tsp unsweetened cocoa powder
Instructions
- Turn your Ninja all in one on saute - high. Add olive oil and onions. Cook until onions begin to brown. Add ground turkey and cook until meat is no longer pink.
- Add in salsa, peppers, tomatoes, broth, chili powder, cocoa powder and coconut aminos and stir to combine everything
- Add in beans if using and stir again.
- Add pressure cooker lid and cook on "high" for 25 minutes.
- Stir in olives (if using) and enjoy!
