I have to admit that I would rather have an apple crisp over an apple pie any day.
I know most people love a good pie crust, but for me, the crust is really not important.
A crunchy topping, however, is top on my priority list!
With a surplus of apples in our fridge, I decided to try to come up with a limited ingredient, limited time and limited cleanup version of a gluten-free apple crisp.
What were my criteria for my own creation of an apple crisp recipe?
- it had to be gluten-free
- it could not contain butter (since I had recently used the last bit of butter in another recipe and didn't have any left
- it needed to quick and easy
- it needed to have only a couple of simple ingredients
- it needed to taste divine!
What makes my Apple Crisp unique?
- I used peanut butter instead of butter since the combination of apple and peanut butter (or any other butter for that sake) absolutely delicious
- Growing up in Canada and now that I am a beekeeper, I wanted to add honey as my sweetener
- I can't stand wasting apple peel, so I wanted to keep the apple peel on
- I only had 1 hour to get the recipe baked and the dishes to be done so it had to be a quick bake as most apple crisps take up to 60 minutes just to bake

According to Barbara Bakes, the secret to a perfect apple crisp is to use great apples. You want to use a combination of sweet and tart apples. Choose apples that stay firm and crisp like a sweet Rome Beauty or a tart Granny Smith, and combine it with a tart Jonathan or a sweet Honey Crisp that will break down a bit when baked.

- use almond butter instead of peanut butter
- use chopped nuts instead of oats
How do you make a Peanut Butter & Honey Apple Crisp
- chop your apples
- toss them with some honey, cinnamon and almond flour
- press them in a pan
- combine the oats, peanut butter and honey and drop spoonfuls over the apples
- bake for 30 minutes, pressing oats down at the 15-minute mark
What if I don't have a 7 x 12 in pan
You can use an 8 x 8 or a 9 x 9 dish instead. Just remember that the thicker the dish, the longer you will need to bake the apple crisp. I would set the timer to 45 minutes and check to see how much liquid is remaining. If there appears to be too much liquid, add an additional 5 minutes until most of the liquid has evaporated.

Ingredients
- 1 lb of apples, chopped
- 6 tbps honey, divided
- 1 cup quick oats
- ⅓ cup peanut butter, melted
- 1 tsp cinnamon
Instructions
- Preheat the oven to 350 degrees F. Grease a 9 x 11 baking dish and set aside.
- In a medium bowl, combine apples, 3 tablespoon of honey and cinnamon. Stir to combine and pour mixture into baking dish.
- In the same bowl, cobmine the melted peanut butter, oats and 3 tablespoon of honey. Stir to combine. Drop spoonfuls of oat mixture over the apples and press it down lightly.
- Bake in the oven for 40 minutes or until there is very little liquid at the bottom of the baking dish.
- Let cool 10 minutes before serving.
