So, although it took 3 failed "easy" banana bread recipes to get to the creation of this Maple Banana Skillet Bread, one bite was all it took to quickly forget about the previous failures!

How to make Maple Banana Skillet Bread
Step 1:
Preheat the oven to 350 degrees F. In a 6 inch cast iron skillet (or other oven-safe skillet), melt 4 tablespoon of butter. Once the butter has melted, add in 1 tablespoon of maple syrup and remove the skillet from the heat.
Step 2:
In a medium-size mixing bowl, add 2 ripe bananas. With your handheld mixer on medium speed, add ¼ cup brown sugar and ¼ cup white sugar. Continue to beat until everything has been combined. Add 2 eggs and beat on high speed. Next, add in the coconut flour, additional maple syrup, baking powder, baking soda, xanthan gum, salt and vanilla. Once everything has been mixed together, add in the vinegar and stir to combine. Carefully spread the mixture over the maple butter mixture and place the skillet in the oven for 30-35 minutes or until the center of the bread has set.

Ingredients
For the Bottom Layer:
- 4 tbsp butter, unsalted
- 1 tbsp maple syrup (I use Lakanto Golden Maple Syrup which is sugar-free)
For the Banana Bread:
- 2 ripe bananas
- ¼ cup brown sugar (use Coconut Sugar for a Paleo option or Lakanto Golden for sugar-free)
- ¼ up white sugar (use Coconut Sugar for a Paleo option or Pyure for sugar free)
- 2 eggs
- 1 tbsp maple syrup
- ⅔ cup coconut flour
- 1 tsp baking powder
- 1 tsp xanthan gum (optional)
- 1 tsp vanilla extract
- ½ tsp baking soda
- 1 tsp vinegar
Instructions
- Preheat the oven to 350 degrees F.
