I just saw the weather for the USA and Canada and spring is definitely in the air. Here is Florida, we seemed to have missed our spring season. We went from the low 80s and are currently scheduled to hit 90 degrees all week! Strawberries and lemon are in abundance so a Lemon Strawberry Tart sounded delicious.
Is it possible for a dessert to be "healthy"? In this case, it sure is.
What are the health benefits of Lemons?
- Support Heart Health - Lemons are a good source of vitamin C. One lemon provides about 31 mg of vitamin C, which is 51% of the reference daily intake (RDI). One study revealed that eating 24 grams of citrus fiber extract daily for a month reduced total blood cholesterol levels.
- May Help to Control Weight - Research shows that plant compounds in lemon extracts may help prevent or reduce weight gain in a number of ways. In one study, mice on a fattening diet were given lemon polyphenols extracted from the peel. They gained less weight and body fat than other mice. Although this is promising research, no human studies have yet to be performed in order to determine if the same effect happens in humans.
- May Help to Control Kidney Stones - Kidney stones are small lumps that form when waste products crystallize and build up in your kidneys. They are quite common, and people who get them often get them repeatedly. Citric acid may help prevent kidney stones by increasing urine volume and increasing urine pH, creating a less favourable environment for kidney stone formation. Just a ½-cup (4 ounces or 125 ml) of lemon juice per day may provide enough citric acid to help prevent stone formation in people who have already had them.

How to make a Lemon Strawberry Tart
Step 1: Making the crust
This is really simple. Combining only 5 ingredients (almond flour, butter, egg, stevia (or sugar) and salt), the crust completed and ready for the oven in only 5 minutes. Here is the link to my Tart Crust recipe.
Step 2: Making the Lemon Filling
In a medium size bowl, combine 1 egg, ½ cup sour cream, ⅓ cup stevia, vanilla and ¼ cup of fresh squeezed lemon juice. Next add in ¼ cup of almond flour and mix until well combined. Pour the mixture into the tart crus and set aside.
Step 3: Creating the Strawberry Layer
In a medium bowl, combine 2 cups of diced strawberries, ½ cup of stevia (or sugar), ¼ cup of lemon juice and 2 teaspoon of lemon zest. Mix until fully combined. If mixture looks too soupy, add 1 tablespoon of coconut flour. Stir to combine and wait 5 minutes. If mixture still looks too soupy, add additional tablespoons of coconut flour until the mixture resembles that of a cake batter. Pour the strawberry batter over the lemon batter.
Step 4: Baking the Lemon Strawberry Tart
Place the tart in the preheated oven and bake for about 60 minutes or until firm in the center. If crust begins to burn tent the tart with aluminum foil.

Ingredients
For the Crust
For the Lemon Filling:
- ½ cup sour cream
- ⅓ cup stevia (or other sweeteners)
- ¼ cup lemon juice
- 1 egg
- 2 tsp vanilla extract
- ¼ cup almond flour
For the Strawberry Layer
- 2 cups (275 g) diced strawberries
- ½ cup stevia (or other sweeteners)
- 2 tbsp lemon juice
- 2 tsp lemon zest
- 1 tbsp coconut flour (or more if needed)
Instructions
- Preheat oven to 350 degrees F. Prepare tart crust by following this recipe.
- While crust is baking, prepare filling by beating egg, sour cream, stevia, lemon juice and vanilla on medium speed. Once incorporated, add in almond flour and stir until well combined. Pour into baked crust.
- Prepare the strawberry layer by mixing all strawberry layer ingredients in a small bowl. If the mixture is too soupy, add 1 tablespoon of coconut flour to the mixture at a time until a cake like batter forms. Pour mixture over lemon filling.
- Place tart on middle rack in the oven and bake for 60 minutes or until firm in the center. If crust begins to brown, tent tart with aluminum foil.
Notes
- You can use frozen strawberries instead of fresh strawberries. However, you may need to boil the mixture to remove some of the water if doing so.
- I dusted the top of my pie with some Swerve confectioner sugar.
